Description
Our head brewer, Daryl, learnt the brewing trade in the Blue Mountains of Australia, bringing back a wealth of knowledge and enthusiasm after an eventful year of travelling down under.
Producing some rather successful test batches in the garage, with overwhelmingly positive reviews from unbiased (maybe a little biased) friends and family, the dream of creating our very our brewery seemed the obvious next step.

​As with any great idea, plans were made over a few beers and we dived head first into the world of brewing, setting up shop in our little unit in West Hythe, Kent.

Things started small, a tiny 100 litre system produced our initial batches, barely enough to fill 2 casks a time! We outgrew this almost overnight, setting about building a bigger, more refined system a few months down the line.

Our brewing process has always been very hands on, with manually controlled pumps and valves - not a computer in sight!

Fast forward to 2020 and we are finishing the final details on our new, shiny brew house - a 1000 litre behemoth, with just a few automated features to help with consistency and keep things running smoothly.

Cask at the Magnet, Broadstairs, 01/10/2025.
Clear golden copper with a lasting off white crown.
Nose is biscuit, grains, stewed fruits, herb.
Taste comprises grass, herb, hedgerow, fruit rinds.
Medium bodied, soft carbonation, drying close spiked with earthy hop bitterness.
Tidy enough green hop number.

On tap at Old Dairy Taproom Tenterden. Clear deep gold colour lasting white head, a pretty looking beer. Yep some malt somw light caramel. Light hops on the finish. A decent slightly malty helles. That's good to style very competent.

Cask gravity at K&ES railway BF 2025. Clear mid brown colour lasting beige head. Some brown malt on aroma. Flavour is malty brown malt. A little sharpness maybe. Not very bitter on the finish. OK.

Cask gravity at K&ES railway BF 2025. Malty flavour. Golden brown colour lasting beige head. OK in mouth some dryness on the finish. OK cask condition. Fine malty golden bitter.

On tap at Doghouse Smeeth. Clear deep gold colour lasting white head. Maybe a little diacetyl on aroma. More butter in the mouth. Not much flavour in the mouth. Very pale light malt. Some dryness on finish. Light citrus flavours. Disappointing. Fizzy, cold and diacetyl.

Cask @ Fez, Margate. Clear copper-amber with a head. Bitter with a lowish maltiness and is easy enough to sup.

Cask at The Rusty Bucket, Eltham. Golden orange pour with a wispy white head. Nose is apricot, sweet citrus. Taste is bitter malts, grapefruit, gooseberry. Long bitter finish.
