Kasuta is een ambachtelijke microbrouwerij gelegen in het Pajottenland, gerund door Frank en Bart. Tijdens onze opleiding tot bierkenner in 2015 kregen we steeds meer en meer zin om ons eigen bier te gaan brouwen. Frank ging in de leer bij Alvinne terwijl Bart voor de opleiding bierbrouwer koos in Gent. Een voormalige stal en een paar oude biervaten, meer hadden we niet nodig om te starten. Eerst met eenvoudige traditionele bieren. Naarmate we meer en meer naar niet alledaagse smaken zochten, besloten we ons te verdiepen in bieren die de smaakpapillen uitdagen maar toch mooi in balans zijn. We experimenteren graag met kruiden, exotische hoppen en ingrediënten die je niet direct met bier zou associëren. Hop speelt wel de eerste viool in ons brouwproces. In elk van onze bieren gebruiken we een lokale hop tijdens het maischen. Een hop die reeds op de boerderij aanwezig was voor de huidige bewoners en door ons gedoopt tot JP hop, naar Jean Pierre, pater familias en naast nonkel Luc één van de twee mecenassen van onze brouwerij. Ons eerste bier, onze Hoffman Trip'l, is een doordrinktripel van 8,5°. Kasuta is de Babylonische benaming voor hop. Eeuwen voor Christus gebruikten de Babyloniërs deze plant bij de bereiding van bier. De plant werd later bij ons bekend als de Humulus Lupulus.

17 August 2019. At Gents Bierfestival X. Cheers to Anke, Kevin & the crew! Named after Karel de Stoute, or Charles the Bold, Duke of Burgundy from 1467 until 1477; earning his nickname ('le Téméraire' or 'the Reckless') because of his warlike character, untamed nature, as well as extreme austerity and chastity (producing only one child, the lamented Mary of Burgundy). His mad ambition made him perish at the battle of Nancy, courtesy of the Swiss army. Anyway, the story of this beer is less interesting: pours hazy dark brown to black with a very thin, frothy, tan head. Subtle aroma of sweet cherry, raspberry, brambleberry, toast, fondant, red fruit jam. Taste is light to medium malty sweet, restrained chocolate & biscuit supporting sweet cherry & sourish brambleberry, a bit toasty with a powdery effect; ends dryish, slightly tart, very low on (earthy) hop bitterness with lingering cherry & chocolate. Some Maraschino-like alcohol warmth. Medium body, oily texture, soft carbonation. I appreciate the name but I would recommend the patriarch 'Filips de Stout'. I'll welcome a revisit if less restrained.

17 August 2019. At Gents Bierfestival X. Cheers to Anke, Kevin & the crew! Named after Filips de Stoute, or Philip the Bold, Duke of Burgundy from 1363 until 1404, who earned his nickname after the Battle of Poitiers where as a teenager he valiantly defended his father, the French king Jean le Bon. So anyway. Appears hazy black with a lasting, frothy, tan head. Aroma of raisin, raspberry, brambleberry, Schwarzwälder Kirschtorte, chocolate powder, toast, red fruit jam. Taste is medium malty sweet, quite fruity, offering raspberry, cranberry & sourish brambleberry mixing with chocolate, bit of a powdery effect, slightly nutty & grape-like perhaps thanks to the wood treatment. Dryish, tart, toasty finish, some earthy hops, very faint wood & dominant red fruits; agreeable warming alcohol hinting at coffee liqueur & Maraschino. Medium body, slick-creamy texture, fizzy carbonation. Sweet fruity & somewhat dry 'powdery' at the same time, I expected a bit more body, although I enjoyed its execution. As a medieval history enthusiast, I might be more lenient because of the name...

Raspberry stout aged on wood, by this adventurous young ‘bierfirma’, sampled at Gents Bierfestival. Pale greyish beige, medium thick but quickly opening head lacing in shreds over a black beer with cherry red, misty edges. Aroma of candied raspberries and sweet raspberry jam, candied cherries even, Kirsch, blackberry compote, toffee, treacle, Belgian chocolates, tawny port, hazelnut paste. Sweet onset, a bit sticky even, with lots of sweet raspberry coulis and raspberry jam in a ‘candied’, clean and streamlined kind of way, rather low in sourness apart from the beer’s natural sourish core but still a soft fruity tartness is noticeable; softly carbonated, syrupy and smooth mouthfeel, very toffee- and chocolate-like middle with the sweet-and-lightly-sour raspberry component creating an effect of fruit-filled Belgian ‘pralines’; ends very mildly ‘dusty’ thanks to the wood, but nowhere really tannic, sweetness remains with this ‘clean’ sourish touch for balance. Desserty, typically ‘clean’ and sweet 'candy' fruit stout – a bit too clean and sweet for me to be truly memorable, but interesting for sure and quite original in a Belgian context so extra point for that.

Greyish-tan head over black beer. Fruity nose as from blackberries, mainly chocolate rather than roast. Cherries, cherry-chocolate ganache, dark green leaves, bit earthy. Very well-bodied, slick, chewy. Low to medium carbonation. Another excellent stout from Kasuta. Pajottenlandstout, great.

Head gone, reddish-black beer. Raspberry with curry, immortelle, chocolate, and some pine/resin. Sourish, raspberry, fruitsugars, chocolate returning, and very mild roast. Well-bodied, as from hot chocolate, not very carbonated. Very nice! Great to find this from a brand new brewery.

Bottle from LDW. Hazy amber with yeast particles, white foam. Nose of sweet malts, citrus, some cooked vegetables. Taste is sweet, irony, grassy, harsh bitter. Unbalanced, not very nice.
