The brewery was founded inside Scourmont Abbey, in the Belgian municipality of Chimay in 1862. Since the seventies the beer is transported from the monastery to the bottling plant 12 km away at Baileux, where also the cheese factory and a visitor center are located. The beer is then refermented in the bottle for three weeks before being shipped around the world. 50% of Chimay beer production is sold on the export markets. The brewing plant was updated in 1988.

Barwa miedziana, niemal klarowne, piana w kolorze jasnego beżu, średnio obfita, średnio trwała.
W aromacie ciemne słody, ciemne owoce, cukier kandyzowany.
W smaku półsłodkie, jest sporo nut słodowych i owocowych, lekka słodycz cukrowo-karmelowa, figi, rodzynki, nuty rumowe szlachetnego alkoholu.
Goryczka średnia, nieco alkoholowa, wysycenie wysokie, ciało w normie.
Dobre, aczkolwiek brakuje większej głębi

Aromass are malt, Belgian yeast and a little spice. Flavors are similar to nose. Fairly mild. Probably least favorite from this brewery.

Aromas are pale Mall Belgian yeast and spice. Flavors are similar to nose with just right sweetness body and carbonation. A bit champagney. Very nice. At a Chimay 175 tap takeover.

Draft at De Paas, Den Haag. Poured a slightly hazy yellow golden colour with a big lasting frothy white head. The aroma is yeasty, aromatic. The flavour is moderate to light bitter, with a fresh, smooth, yeasty, light aromatic hop bitter palate. Medium to light bodied with average carbonation.
