The brewery was founded inside Scourmont Abbey, in the Belgian municipality of Chimay in 1862. Since the seventies the beer is transported from the monastery to the bottling plant 12 km away at Baileux, where also the cheese factory and a visitor center are located. The beer is then refermented in the bottle for three weeks before being shipped around the world. 50% of Chimay beer production is sold on the export markets. The brewing plant was updated in 1988.

Bottle from Liquor Mountain. Pours a glowing deep orange-gold with a tall, thick head. Fruity, spicy aroma, citrus, apricot and nectarine, honey, coriander, cloves, esters. Great. Sweet, rich flavor with stewed apricots, clove, grapefruit and orange, honey biscuits. Lovely stuff. Quite starkly bitter finish to balance it all. Full body but not cloying or lagging on the tongue.

2023 bottle. Unclear muddled dark golden with long lasting creamy head. Clove, resin, bitter herbs, vanilla, honey, booze, grapefruit zest, hints of lemon juice, butter cookies. Dry zesty herbal bitterness, boozy sweetness. Full bodied, very creamy texture, soft to lively carbonated, dry zesty herbal boozy bittersweet finish. A nice strong Belgian Blonde Ale, rather well hopped, not that sweet as expected, very complex with an excellent mouthfeel.

Clear mahogany colour, medium sized dense beige-ish ecru head; aroma and taste of dark chocolate, dried sour cherry, caramel, red wine-like, some ash, red berries and raisins soaked into alcohol; quite good one!

0.75l bottle many thanks to Lore. Dark brown body with a ruby hue and a beige head. Aroma of banana, oak, molasses, rum even a bit of cocoa. Taste of banana, ripe pears, sugar syrup, oak, rum, plums and a tiny bit of floral hops. Most of these oak aged Chimays are out of this world, this is not an exception.

Reddish brown with a medium head. Aroma of red berry malts. Flavour is chocolate malt, Belgian chocolate fruits. Dusty base, long chocolate fruit finish.

Deep reddish brown with a tan head. Big candied dried fruits, dark berries, brown sugar, oak, a bit caramel, herbal. Medium to full body. It’s quite a nice beer. The rum doesn’t shine too strong but is slightly present.

750ml bottle from Raynville Superstore. It pours clear blonde with a lasting, fluffy white head. The aroma is toasty grains, freshly baked biscuit, bready malt, bitter - sweet, sponge cake, tangy citrus, orchard fruits, apple, pear, apricot, spice and cereal. The taste is crisp, dry, snappy upfront, rather fruity, ripe stone fruits, pear, apple, dried apricot, tangy citrus, touch of sherbet, toasty grains, grain husks, digestives, bready malts, grassy, spicy and herbal accents with a drying finish. Medium bodied and moderate, fluffy carbonation. Decent depth to it. Quaffable.
