Description
Chimay is an authentic Trappist beer: this means that it is brewed within the walls of a Trappist monastery, under the control and responsibility of the community of monks, who are involved through the process of making and marketing the beer. Most of the income generated by this activity is devoted to the needs of the community and social works.

The brewery was founded inside Scourmont Abbey, in the Belgian municipality of Chimay in 1862. Since the seventies the beer is transported from the monastery to the bottling plant 12 km away at Baileux, where also the cheese factory and a visitor center are located. The beer is then refermented in the bottle for three weeks before being shipped around the world. 50% of Chimay beer production is sold on the export markets. The brewing plant was updated in 1988.

Bottle. Dark fruit aroma with notes of caramel, toffee, toasted malt, spicy Belgian yeast and banana. Pours dark copper colored with a large tan head that has excellent retention and lacing. Starts with dark fruit, caramel and banana flavors. Finishes smooth but a touch dry with toffee, spicy Belgian yeast and toasted malt flavors. Excellent Belgian!

Bottle pours cloudy gold with strong carbonation and a moderate white head that lingers. Dense, creamy mouthfeel yields gentle bursts of spice revealing bread yeast flavors. Well balanced dry finish. Excellent!

Bottle @ Herøya. Unclear pale golden body under a huge, foamy white head. Nice and refreshing aroma of pale malt, generic fruitiness, spicy belgium yeast and a floral touch. Taste is light and refreshing as well, still pretty tasty. Pale malt, a frosty touch, spices, belgium yeast and flowers. A very nice and tasty take on the style. To be repeated.

Bottle. Golden beer with a big cream head. Yeast and light spice aroma with malt. Yeast and light summer fruit flavor with spice and light malt. Medium bodied. Spice and malt linger with yeast and light summer fruit.

0.33l bottle many thanks to Lore. Hazy golden body with a lasting white head. Fruity aroma with notes of orange zest, pears and apples with some spices that you'd expect from the Belgian yeast (pepper and coriander mostly). Taste is pretty much the same only that it has a bit of doughy yeast and some floral hops to it too. The finish is in fact quite bitter and spicy. Very nice blond.

Bottle. Mitchell’s Wines. Hazed yellow gold. Beautiful swede is dense lasting glossy white. Nose has yeasty bready malt. Floral and fruity along the lines of ripe dessert pear. Taste has some sweetness with an estery bitterness. Very easy drinking with foamy rolling carbonation. Fruity estery lightly bitter finish. Great stuff assisted by the fact it looks tremendous.

0,33l bottle from Alko. Clear golden brown beer with medium, stable cloudy head. Aroma is belgium yeast, floral notes, dried apricot. Flavor is floral notes, caramel, yeast, honey, spices and woody piney notes. Bit boozy.
