Description
Chimay is an authentic Trappist beer: this means that it is brewed within the walls of a Trappist monastery, under the control and responsibility of the community of monks, who are involved through the process of making and marketing the beer. Most of the income generated by this activity is devoted to the needs of the community and social works.

The brewery was founded inside Scourmont Abbey, in the Belgian municipality of Chimay in 1862. Since the seventies the beer is transported from the monastery to the bottling plant 12 km away at Baileux, where also the cheese factory and a visitor center are located. The beer is then refermented in the bottle for three weeks before being shipped around the world. 50% of Chimay beer production is sold on the export markets. The brewing plant was updated in 1988.

Bottle at Hops, Crewe. Pours golden amber (clear at first, hazy after dregs/yeast added) with a medium sized thick foamy almost white head and some lacing. Belgian yeast and banana dominate the aroma. In the mouth it’s on the cusp between sweet and sharp. Flavour has Belgian yeast and hops, bubble gum, coriander and cloves plus hints of pears and plums. Spices come along later, and become stronger in the slightly dry finish. This is very nice – a classic tripel.

Clear golden pour with a large, stable white head. Aromas of malt, orange (peel), lemon/lemonade, almonds, some pepper as well. Tase is malt, sweet bread, orange, peach, lemon/leomande, some licquorice and spices/pepper for a decent, slightly boozy finish. Not bad at all.

opalescent golden colour, huge, dense and long lasting ivery-like white head; aroma of fruity (pear and apple, mainly) , floral, coriander and lemon zesty notes; hoppy bittery taste with the same notes as can be felt in the aroma; refreshing one

750 ml corked & caged bottle, from Vinmonopolet, Nettbutikken. ABV is 6.5%. Slightly hazy golden colour, huge white head. Aroma of malts, white kandij sugar syrup, "spicy" Belgian ale yeast and stewed yellow plums. Flavour with the same elements, also citrus and moderate bittering hops. Good beer.

75 cl-flaska från SB. Disig gyllengul vätska med högt krämigt och stabilt skum. Ser mycket vacker ut i en remmare. Försiktig belgojästig doft med estrar och fläder. Mjuk och lätt kropp, lättdrucken, lätt kryddad med lite koriander, curaçao och lätta bananvibbar. Även söta päron och marsipan. Gott

Pours hazy blonde. Scent is full on BE yeast aromas, banana up front, but in a way, smooth and likeable. Taste is surprisingly bitter. Full on banana and bubble gum in the aroma - bit too mich for me. Def took a hit in it's maltyness. Bitterness gets compensated by residual sweetness. Ok.
