Description
Chimay is an authentic Trappist beer: this means that it is brewed within the walls of a Trappist monastery, under the control and responsibility of the community of monks, who are involved through the process of making and marketing the beer. Most of the income generated by this activity is devoted to the needs of the community and social works.

The brewery was founded inside Scourmont Abbey, in the Belgian municipality of Chimay in 1862. Since the seventies the beer is transported from the monastery to the bottling plant 12 km away at Baileux, where also the cheese factory and a visitor center are located. The beer is then refermented in the bottle for three weeks before being shipped around the world. 50% of Chimay beer production is sold on the export markets. The brewing plant was updated in 1988.

Bottled. Hazy brown colour with huge bubbly beige head. Sweet alcoholic citric aroma with some malty notes. Barley, malt and lots of yeast in the flavour. Also some banana and caramellish hints. Pleasant palate, but a bit much carbonation.

Bottled. Hazy orangeish colour eith beige bubbly head. Sweet toffeeish plummy aroma with hints of licorace. Sweet sugary and caramelly flavour with hints of licorace. Alcohol grows a bit in the finish.

(bottle) hazy orange colour with a steady foamy white head. Banana and coriander aroma with a touch of hops. Sweetbitter flavour with a malty start, fruity orange peel mouthfeel with a spicy bitterdry hoppy finish.

11oz bottle-pours an off white BIG head, cloudy golden/straw color. Aroma is a nice light malty, maybe yeasty too. Flavor has a nice bite, a little dry. Not as much flavor as I expected.

(Bottle 75 & 33 cl) Vintage 1992. Reddish dark, hazy and impure with a tall head. Very full-bodied with a warming but never cloying alcohol - actually, it doesn’t really appear that strong. Chocolatey and spicy - perhaps even a bit peppery? I cannot really taste the difference between the "Bleu" in small bottles and the "Grande Reserve" in the big, but try sampling different vintages at "Kulminator" in Antwerp - it’s a great experience. 201193

(Bottle 33 cl) Amber coloured, frothy head, lots of sediment. A dry, very dry almost medicinal or herbal beer, and as such an unusual trappist. Bottle. Sweet aroma - apple, peach. Orange tan color with small head. Light peach/apple flavor with moderate acidic/astringent finish. Subdued but sublime - a great beer.

Bottle. Malty, brown sugar, yeasty aroma. Dark brown colour, slightly cloudy. Big semi-stable head. Peppery and brown sugar flavour. Alcoholic, very dry aftertaste. Good mouthfeel, as if there is rye in there and with pleasant carbonation.

I vacillate between this one and the blue as to which is my favorite from this brewer. Too pricey for me to have very often but it makes a nice change of pace. +++ Sampled from an 11.2 oz brown bottle this brew poured a murky brown color with a faint reddish tinge and a huge creamy beige head that lingers and leaves a bit of lacing. There is a tart, sweet fruity hop aroma with light sourdough bread undertone, a touch of mustiness and hints of cherry, raisin and toasted caramel. The flavor was tart, bitter and had light touches of fruity and floral hops, cherry, sugar, caramel, nut and a faint musty undertone. The finish was long, sour, tart , fruity and somewhat astringent with some noticeable alcohol. Fairly full bodied. Very well done.
