IerBius staat voor ambachtelijk speciaalbier, op kleine schaal en met liefde gebrouwen onder vrienden, niet gefilterd, niet gepasteuriseerd, niet gelagerd en nagegist op fles. Geen magnesiumoxide voor een snelle isomerisatie van de hop, geen hopextracten of tetrahoppen, smaakversterkers of schuimstabilisatoren, geen fosforzuur of siliconen maar uitsluitend puur natuurlijke grondstoffen. Eventuele additieven zijn zelf van fermentatie afkomstig. Naar analogie met slow food en in tegenstelling tot heel wat andere brouwerijen krijgt bier van IerBius de tijd om te rijpen en mogen er wat gistresten achterblijven op de bodem van de fles. Geen filtratie of koude lagering dus, maar een volle maand vergisting en klaring bij 18°C of meer, al naargelang het bier, gevolgd door nagisting op de fles.

The third Ierbius, a quadrupel, with a name in the local dialect like the other two beers, launched at Maldegems Bierfestival. Mousy, egg-white, slowly dissipating, large-bubbled and bit irregularly edged head, hazy caramel-bronze robe with almost purplish hue. Aroma of molten candi sugar, caramel sauce, rainwater, dried plum, chewing gum, something iron-like, sugared tea, blue plum, banana, honey, pear syrup, wet tree leaves. Very sweet onset, dark unfermented candi syrup, fruity hints of plum, banana and pear, soft carb, bit ‘fluffy’ mouthfeel, resinous, with a thin iron-like edge; toffeeish, bready malt sweet body, thick layer of honeyish candi sugariness on top, sticking a bit to the teeth even; iron-, dead leaf- and rainwater-like aspects continue well into the finish, where they meet with a soft background floral hop touch and a warming, yet nowhere astringent alcohol glow. Too sweet even for a style that naturally contains a lot of sweetness – seemingly inspired by Kasteelbier or something alike; technically of an acceptable level, but like their other beers, feeling a bit amateurish and in need of finetuning.

Saison from a new microbrewery in Maldegem in the Meetjesland region northwest of Ghent, tasted at Maldegems Bierfestival. Egg-white, frothy, regular, mousy and stable head, hazy apricot blonde with ochre-golden hue. Aroma of sourdough, freshly cut red apple, pineapple, some DMS (overcooked cauliflower), wet cloth, raw potato, field flowers, soggy old bread. Crisp, fruity onset, sharply and very minerally carbonated even for the intended style, bit numbing; apple and pineapple aspects mingle with a doughy and cereally pale malt sweetishness edged by deep wheat sourishness, becoming more bready in the end with spicy phenolic notes and a floral, grassy hop bitterishness that lasts quite long. Unfortunately the DMS rises up again in the end, more or less ruining it for me. Started off nicely though, with a crisp, apple-like sourish aspect, quite refreshing; shows promise, but needs finetuning from a technical point of view.

As if in consultation, the 3 local brewers - or brewery clients - in and around Knesselare (NW of Flanders), made a special wheatbeer for this summer. All the more reason to compare them next to each other. So this rating is part of the Great Pan-Knesselare Wheatbeertasting. In order: Ierbius Schuum an je Neuze (Ierbius, Kleit), Run through a Field of Wheat (The Musketeers, Ursel), and Geirn Meugen Tarwe (Van Renterghem, Knesselare). One tip off the veil: the most remarkable feat turned out to be than none of the three had any sign of the classical wheatacidity... Very dense, very stable fine white head, fed by very lively carbonation in faintly hazy, yellow-golden beer. Wheat, citruspeel, coriander, spicy. Something vegetable as well. Sweet flavour, lots of restsugars, but also malt, grain, boiled potato - and some good hops in the finish, nettles, herbs, which saves the deal for me. Creamy MF; feels less carbonated than the visual impression. Light body. Aftertaste is bitterish to bitter, which spoils nothing. Let's start with the good things. Compared to their first "Bloend", this is a much more accomplished product, considering that as a rule I don't like witbier overmuch. It gives a better alternative for any of the major industry wits. OTOH, I still think they got a long way in front of them, and it is definitely the least of the three.

Overflowing orange-tinted head, slowly releasing hazy yellow-orange beer; Dry EU hops; faintly aromatic-perfumey nose; bit of toasted malts, dry herbs. Dry-spicy, peppery flavour. Good balance between hops and malts, finish is a bit sweet(er), maltsugars afore. Some yeastfeatures, not disturbingly. Medium bodied, quite slick, good carbonation. Far from bad, but no way one is going to get excited from this one. Yet another decent blond. What I wonder about is whether this is really brewed @ the grotto... and if by the sugarbeets candi sugar is meant. 7/4/7/3/13 Bought @ Dranken Goegebuer, Knesselare
