Our story starts on the rugby pitch, where founder Evan Sallee, Niko Tonks, and Matt Hauck first met while playing for rival teams. The competition turned into friendship and while home brewing together the idea of founding a brewery started simmering. Then, the notion of a cooperatively owned brewery came to life when the three founders had beers together at Black Star Co-op in Austin. Our founders believed the operations of craft breweries were opaque and that there was a gap between being a home brewer and owning a brewery. The founders’ hope was that the co-op model would provide a way for consumers to be more involved in operations while also bringing co-op values to the Minnesota craft beer scene.
That hope resonated with family, friends, and neighbors. Nearly three hundred members joined the co-op before the taproom doors even opened. On September 6, 2014, Fair State Co-op became the first cooperatively-owned brewery in Minnesota, and the third in the country. In the years since we opened, co-op members have helped design beer recipes, picked fresh berries for our annual fruited sour, and volunteered countless hours through our Cooperates program.
The support of members still drives our success. The cooperative’s membership is currently over 1,500 and growing every day. In 2017, we added a 40,000 square foot production facility to meet growing demand in distribution. At the original Northeast brewery, we continue to brew innovative small-batch beers that feature hard-to-source and local ingredients. Often these limited beers are only available at the taproom or through the cooperative’s bottle subscription program, Journeys + Sidequests.

On tap at the brewery. Pours a hazy light gold with a white head that dissipates to the edges. Aroma has a good amount of sour light fruits with some wheat and an earthy Brett supporting. Flavor has a really nice sour note with light acid and a Brett funk as well as a wheat backbone.

On tap at the brewery. Pours a clear gold with a near white head that dissipates to the edges. Aroma has has a nice dry bread note with a light grain and straw note supporting. Flavor has crisp dry grain with bread and straw supporting.

On tap at the brewery. Pours a hazy yellow gold with a white head that dissipates slowly to the edges. Aroma has a light grass note with some earthy tropical fruits and a light grain backbone. Flavor has grain and grass with some earthy tropical fruit and mild pine.

Hazy gold color. Lacing white head. A good looking beer. I am not getting a lot of aroma, bitter hops, fresh cut plants. Flavor is dry; bitter hops, chalk, some spice and under ripe fruit. Good, full palate. Solid beer.

Black color, no head. Aroma has yeasr and some fruit. Lightly tart but some complexity with the roasted grain and also a lot of grape, a little cinnamon, dirt, and lots of grape in the aftertaate. I like this much more than the original, and much more than most dark sours.

On tap at the brewery. Pours black with a grayish brown head that dissipates to the edges. Aroma has an earthy tart grape with some dark grains, a hint of roast and a light funk note. Flavor has a nice combination of musty grape and earthy dark grains and a bit of roast.

Tap at Fair State. Cloudy pirple color. Lots of natural berry aroma. Flavor is berry, but not a lot of it and no identifiable parricular berry, also a lot of wheat. Yeasr, and a very mild tartness. Peobsbly the least soir of the lactobac series so far.

On tap at the brewery. Pours a cloudy light purple with a white head that dissipates to the edges. Aroma is very yogurt forward with a good amount of wheat and a touch of tart blackberry. Flavor is very yogurt and wheat forward with a hint of tart berries.

Tap at Fair State. Hazy yellow. Notuch aroma here. Very dry, grass, some light spice, and yeast. Recognizable saison yeast. Nor sweetened. I am not crazy about this but it is a well made beer.

I dont find this astringent at all, but kind of a strange beer. Gopd colored Belgian ale and immediately recognizable as that style. I am surprised the abv is so high, it is well hidden in the flavor and aroma. Some coriander flavor. Belgian yeast, cereals, medium sweet and it seems to get sweeter as it warms.
