Description
Based in Perthshire, Scotland. We try to make light, modern mead with flavours inspired by archaeological finds in Northern Europe. The Rookery looks to evidence in the historical and archæological record for source material, then back-engineers these ancient drinks to create modern and exciting products.
At the Rookery, the fermentable in all our recipes is honey and we never use sugars or syrups. All the flavourings are high-quality ingredients and never artificial flavourings. Most of our meads use hand-foraged ingredients, concentrating on Scottish native species such as meadwort, heather, silver birch sap, crab-apples and a range of hedgerow berries.

Sampled @ GBBF 2017, Day 1. A clear light orange yellow colour. Aroma of sweet cherries and raspberries, honey. Taste of strong honey, quite sweet, alcohol.

Sample @ GBBF ’17. Pours very pale yellow. Aroma is strong alcohol, spruce. Taste is honey-sweet, prominent alcohol with some pine, spruce, floral notes. Full-on.

175ml glass at the Cambridge Beer Festival, 2017. Light gold. Scent of lavender and nettles. Almost perfect but there’s a slight plastic note taking it down a notch or two. Sweet and herbal taste. Long honeyed finish with strong alcohol. One problem I have with mead is the often thin palate, but this is thick and gooey. It’s incredible.

Heather.. Meadow sweet, dog rose(rosehip flower) tk 2 for stella.. With massive thsnks to random steward for putting hid finger on why i dont likrbit... Its a massive buttery popcorn finish
