Pâle, col blanc pétillant pas tenace.
Arôme est frais avec une belle présence des divers marcs – finement sur le mielleux organique tout en ayant un discret support funk de levure sauvage. Le tout est rehausse par un agréable effluve de fruits a noyaux et verts tout en ayant un apport discret des malts.
Palais est sec d’emblée avec un caractère ‘sour’, fleuri et fruite blanc – jaune – marc de raisin de divers cépages tout en gardant une belle base de la bière – pomme verte et abricot avec une touche de nectar.

On tap at L’Atalante, pours a hazy golden with a small white head. Aroma has too much estery character, with toasted grains, and a touch of pepper. Flavour is drier, with toasted grains, estery notes, and a light rustic character. Too estery, not utilizing the saison yeast all that well. Meh.
