2 years old - Cloudy tan with swirlig carbonation and a thick, foamy head. Aroma shows pears, lots of yeast, leather, white pepper, coriander, bread crust, herbal hops; palate has sweet notes of caramel flan, pepper, dried peaches, barnyard with cobwebs. Finish is dry (pepper, alcohol), with a slight acidity. Vintage Rating: 9 5 8 5 16 = 4.3 (I thought it had improved hugely until I looked at my old rating notes and realized this beer started pretty good).
Rating when fresh: Very well-balanced abbey ale. Tan colour (is this a tripel or a dubbel); good yeast bite, but not overwhelming like Saison Dupont; sweet malt flavours develop well, and the finish is notably spicy (cinammon, pepper, maybe even cardamom).
