Description
In 2015, Hubbard’s Cave was developed as an alternative to our Belgian Style Ales. Producing American Style ales, primarily imperial stouts and Hubbard’s Cave signature Fresh IIPAs, Hubbard’s Cave is a refreshing addition to the Une Anneé Family. Named after the Chicago Hubbard Street traffic tunnel on Interstate 90/94, next to where the brewery was born, Hubbard’s Cave has quickly grown to produce some of our most popular offerings.

Can to snifter.
Appearance: jet black in the pour and also in my glass with a finger's worth of khaki foamy head which slid off delicately to leave some light lace
Aroma: dark chocolate, milk chocolate, sweet cream, some maple in there for the balance then some coffee earthy to semi-sweet contours
Flavor: generates a nice blend of the prior noted aromas, mild aftertaste of the dark chocolate and maple
Texture: medium bodied, good as a sipper, very smooth along my tongue; finishes very smooth with the maple, chocolate and coffee notes
Overall: a very nicely done pastry imperial stout I believe I would come back to.

Can to snifter.
Appearance: black in color with quickly dissipating head which didn't give any lace
Aroma: vanilla sweetness up front, then the milk chocolate and dark chocolate tones; subtle sweet to earthy coffee qualities
Flavor: starts sweet through the vanilla and chocolates then seems to develop a light blend with the earthy to sweet and semi-bitter qualities of the coffee; mild aftertaste of the vanilla, chocolates and earthy qualities
Texture: medium bodied, great sipper; very smooth along my tongue, almost cloying, finishes fairly sweet
Overall: mostly good imperial pastry stout for being almost overly done, I think I could possibly come back to this.

Aroma: dark chocolate, coffee roastiness, light caramel/toffee malts, some toast and light nuttiness
Flavor: moderately sweet flanked by some light bitterness and roasty tones; mild aftertaste of coffee and dark chocolate
Texture: medium bodied; great sipper, semi-smooth along the tongue with some roasty abrasion but not really aggressive - just noticeable; finishes fairly medium to long with some coffee roasty tones
Overall: nicely done imperial stout very worthy of coming back to.

Can @ Clark Street Ale House, Chicago IL (Dec 2025). Pours extremely hazy dark yellow-orange with a very small frothy off-white head, citrus-mango aroma, adequate carbonation, mildly bitter mango-citrus peel taste lavender flavor, alcohol undertones, somewhat thick body, long finish. Tasteful NEDIPA.

Dark brown. No head. That is just a lot of vanilla on the nose. On the palate, very desserty vanilla. It's fairly simple, but it's got that big vanilla richness that's nice.

750mL bottle, pours black with a small tan head. Aroma is full of deep vanilla beans, gentle barrels, and deep malts. Flavour is full of vanilla ice cream, vanilla beans, some cake frosting, and hot bourbon barrels. Though it does have that vanilla ice cream, the vanilla depth is pretty impressive, and the barrels round this out nicely. Great stuff.

Poured from 750mL bottle (2023 vintage). Very dark brown with very minimal beige head. Lots of sweet vanilla upfront, boozy bourbon underlay, feint chocolate malt. Decent.

750mL bottle. Pours nearly black with a minimal head. Loads of vanilla up front with notes of chocolate, roast, and barrels on the nose. Flavour has a ton of vanilla beans, good roast, nice boozy barrel character. Maybe a touch too much on the pastry side. Very nice.
