This starts with the approach to recipe development taken by our Head Brewer, Keigan. Contrary to starting with a style guideline in mind, then moving forward – he starts with a flavor and experience in mind, then works backward. And since we’ve decided to not be bound by style guidelines, he’s free to use whatever ingredients in any amount with whatever technique he wants to create a new beer experience.
To enable this philsophy and to enhance our creativity, we created a custom built brewhouse that allows us to make the beers we want to make. It’s centered around the region’s first mash filter. This piece of equipment allows us to use any grain in any percentage – and do so while using a fraction of the water and energy of a traditional brewery.

Not many black lagers in my history but I have generally liked them. This time I have a 16 oz can of Supra Black acquired from Half Time late last year. I have a new-to-me tall pilsner glass in place for the tasting and I proceed. I have to say the view is glorious in the proper glass. Super black with a complementary, decent-sized khaki head that is slow to settle. The nose is grain-heavy with a bit of chocolate. The drink is much the same, scorched grain, malt and a slight amount of semisweet chocolate. The finish has an all right hops bitterness. Nice way to break in the new glassware.

I obtained a pint can from Half Time, have it cooled and ready to pour into a Great Heights tulip glass. The appearance is a hazy lemon yellow body supporting a modest cover of completely white foam. The nose is pleasant enough, there is orange juice, a bit of pineapple and grain along with a touch of hoppiness. Likewise the drink brings oranges, white bread, guava, honeydew melon and a small hops taste and bitterness. Not bad, not exciting. An easy IPA to drink.

Can to becher pint glass.
Appearance: semi-bright yellow to almost golden with a finger's worth of white foamy head which slid off and left some concave lace
Aroma: bright citrus, piney and some oranges in the hoppiness, clean malts intermingle
Flavor: very nice blend of the prior mentioned aromas, subtle aftertaste of citrusy hops and clean malts
Texture: light to medium bodied, sessionable, some hop zing on my tongue but not too distracting, finishes semi-crisp and citrusy with some pine
Overall: pretty good NEIPA or AIPA depending who you talk to. It's one I would come back to.
