This starts with the approach to recipe development taken by our Head Brewer, Keigan. Contrary to starting with a style guideline in mind, then moving forward – he starts with a flavor and experience in mind, then works backward. And since we’ve decided to not be bound by style guidelines, he’s free to use whatever ingredients in any amount with whatever technique he wants to create a new beer experience.
To enable this philsophy and to enhance our creativity, we created a custom built brewhouse that allows us to make the beers we want to make. It’s centered around the region’s first mash filter. This piece of equipment allows us to use any grain in any percentage – and do so while using a fraction of the water and energy of a traditional brewery.

Can.
A- Black color, black liquid, minimal head.
A- Coffee, earthy, mild alcohol, chocolate, faintest maple.
F- Earthy, bitter, cocoa, burnt, brown sugar.
T- Medium body, creamy texture, average carbonation, bitter finish.
O- Get lots of earthy burnt coffee but that's it. A bit of sweetness from the maple and brown sugar but little flavor. Disappointing.

16 oz can purchased at Lunds & Byerlys Wines & Spirits in Golden Valley, Minnesota. The pour is mostly clear golden with a smaller off white head. The aroma is orange, mango, pine and caramel malt. The taste is caramel malt, pine touch of the orange citrus, more malt and pine towards the back. Mineral as it warms. The palate is medium bodied with soft natural carbonation and dry pine resin finish. Nice one.

Sampled from the tap at the brewery. Pours black with an earthy brown head that dissipates to the edges. Aroma has dark grains and rich bourbon with light chocolate and roast supporting. Flavor has chocolate, dark grains and bourbon with a bit of date coming through.

Sampled from the tap at the brewery. Pours a clear copper with a gold hue and a thin white head that dissipates quickly and completely. Aroma has sweet bread and light caramel with a hint of toffee coming through. Flavor has bread with growing sweetness, some toffee and a bit of caramel in the finish.

On tap at the brewery. Pours a clear brown with a slight amer hue and an light brown head that dissipates to the edges and laces slightly. Aroma has notes of bread and light chalky chocolate with a bit of roast and oak coming through. Flavor has dark grains and oak with a bit of earthy grain supporting.

On tap at the brewery. Pours a clear brown with a slight amber hue and a near white head that dissipates to the edges. Aroma has oaky dark grains with light roast and a hint of leaves underlying. Flavor has bready roast with dark grains and a hint of oak coming through.

Can poured into a nonic pint. Black pour with a fizzy brown head. Aroma is dark roast coffee, roast, char, hint of maple & brown sugar sweetness. Initial taste is coffee forward with brown sugar, vanilla, and oats. Fades to a smooth, earthy coffee bitterness. Smooth, full body. Really enjoyed this!

Shaker pint draft at Reverie in Minneapolis, Minnesota. The pour is a clear golden, with a nice lasting ½ inch white head. The aroma is clean cracker malt, nice toasted character, softly malt sweet and a gentle smokiness surrounding. The taste is really clean Helles with soft gentle smoke accenting the flavor. The palate is light bodied, active carbonation and a clean crisp finish with lingering roast and smoke. Nicely executed.
