This starts with the approach to recipe development taken by our Head Brewer, Keigan. Contrary to starting with a style guideline in mind, then moving forward – he starts with a flavor and experience in mind, then works backward. And since we’ve decided to not be bound by style guidelines, he’s free to use whatever ingredients in any amount with whatever technique he wants to create a new beer experience.
To enable this philsophy and to enhance our creativity, we created a custom built brewhouse that allows us to make the beers we want to make. It’s centered around the region’s first mash filter. This piece of equipment allows us to use any grain in any percentage – and do so while using a fraction of the water and energy of a traditional brewery.

On tap at the brewery. Pours black with a light grayish brown head that dissipates to the edges. Aroma has dry dark grains with slightly earthy roast and a hint of bread underlying. Flavor has strong roast and slightly bitter dry dark grains with some bread in the finish.

On tap at the brewery. Pours a clear light yellow gold with a white head that dissipates to the edges. Aroma is straw forward with a bit of sweet corn and light bread supporting. Flavor has light sweet grains, corn and a bit of a bread note in the finish.

On tap at the brewery. Pours a clear deep gold with a white head that dissipates slowly to the edges. Aroma has bread and a slight smoky note with a bit of grass and flora underlying. Flavor has light smoke and sweet bread with some grass and a hint of hay backing.

Pretty cloudy red amber to red brown beer, big creamy beige and a bit irregular head, pretty stable, adhesive, leaving a nice lacing in the glass. Aroma: ooooh my, very intense, very floral notes, some honey,c caramel touch as well, hoppy, a little dank, a bit dusty, slightly oxidized. MF: ok carbon, medium to full body. Taste: sweet full malty start, some carmel, grains, gentle bitterness, turning more fruity on warming up, almost a bit sourish, hoppy, some bitter resin, citrus, fruity, dank, some green apples, nice stuff! Aftertaste: dry, bitter, some citrus, hoppy, probably MUCH better when fresher.

Sample (thanks omhper!). Yellowish golden colour, big foamy white head. Aroma is floral, grassy, herbal and mild methane. Flavour is herbal, floral, herbal, grassy and some mild bready tones.
