We brew in small batches in our 15 barrel brewery and we’re always experimenting with new recipes. Dan and Pat ,with previous experience from the wine world, get to marry the fascination with the natural world and the art and science of fermentation.
Dan keeps cooking up some good recipes and Patrick the builder keeps finding ways to add more tanks and increase our production.

Moderately hazy, maize-golden body is well-carbonated creating a small but fairly dense, white head that shows moderately-strong retention.
Juicy mango, pineapple and meyer lemon in the nose are backed by soft, biscuity and honey-filled malts. Light peppery spice and fresh, lightly dank greenery on the end help perk things up and provide more depth than the tropical and lightly citric fruits show up front. Very clean, with no alcohol, flaw and very little resin.
Juicy pineapple and meyer lemon mixes with leafy, lime zest and vegetal greenery. Black pepper, and light grains in the background providing some complexity in the texture with the main force of the malt being soft and well-attenuated, adding gentle sweetness. Tight carbonation and low resin. Gets pretty full-bodied with lots of malt and bready texture as it warms, but due to the dryness and elegance of the hop treatment, it never gets fatiguing nor does the alcohol come through overtly or sharply. I think I liked Pieces of Eight a little more, but this was excellent in its own right. When Foley Bros beers are on, as this one is, they come off much lighter than their abv would suggest and with bright, highly aromatic hop characteristics.

Tasting at SF; 9.5% ABV
Dark brown color. Soapy and boozy aroma of roasted malts. The body is off dry, the flavor is a bit chocolatey, a bit earthy, with strong alcohol feeling. Good.

Tap. Pours lightly hazy pale golden, small white head, great lacing. Aroma is Citra, dank and tropical, hints of armpit, pine, melon. Flavor is light sweet, light plus bitter, low malt. Medium light body, a bit creamy and yet a touch lacking in body. Nice.

650ml bottle shared at Brian’s office. 9.5% ABV. Pours a very dark brown with a tan head. Aroma is grainy with roasted malt notes. Taste is fruity, with roasted malt and some coffee notes. An ok.

Dark brown. With a thin head. Ok, there’s some coffee on the nose, but with some chocolate...it’s ok impy, the coffee is noticeable but somewhat innocuous. Nothing wrong with it, but not exciting me either.

Pours slightly hazed gold into a tulip. Bright white head with medium retention recedes leaving spider lacing. Sweet mango and passion fruit aromas. Soft and dry with papaya and pineapple upfront turning to dried mango in the lasting finish. Nice.

Bottle at home late night uneccessarily. Fine dirty golden pour. Nose isntropical and some pine. Tastes of pineapple, pine, grapefruit, flowers, some banana. Lightly bitter. Ok
