Hell yeah that's nice bourbon. Backed by brown sugar and light toffee, it gives off big spice, but nothing too intense/dry/tannic or alcoholic. Deep, dark amber colors suggestive of more toasted character and indeed, there's an almost stout-like nuance to it suggesting slight roast. Not sure what birch staves smell like, exactly, but there's definitely some woodiness that isn't your typical oak/bourbon oak. Lingering raisin, spicy bourbon, vanilla and caramel but it doesn't overload on the sweetness.
Rich and malty with excellent carbonation helping clear the palate, though there's no excessive sugar, as the beer is nicely attenuated. Not syrupy, maybe not quite chewy, but still amply malty with an incredible expression of the bourbon, with further wood character assumedly from the birch. Slight tannin on the finish helps give great balance; I'm always worried an big, English barleywine will be too sweet as you drink more than a few sips, but not an issue here. Bourbon, birch, oak and good malt and yeast acidity all keep it oddly drinkable for its size. Like one of the Barreled Souls barleywines that are so well-balanced and drinkable you could just easily dome a full 15% bottle....
This guy is a master! It's shocking that this brewery is completely unknown.

2020 500mL bottle drunk 12/20/25, as pictured.
Bit of charred oak and some stronger tannin, but nothing too intense or off-putting. Nice to see a non-Bourbon version. Mild chocolate, hints of soy-like oxidation (appropriate to its age) and no alcohol noted. Seems very nicely attenuated, as well.
Chocolatey and charred with a round, lightly tannic oak character that is fairly prominent. Rich chocolate with hints of chewy fudge, but overall great attenuation. No syrup, but still ample body for 5 years old with minimal oxidation. Exceptional balance throughout, all the while highlighting the lovely oak character. Char always at the edges, but never too prominent. No alcohol noted.

Not much acidity in the nose, if any. Some medicinal/spice character, possibly the sumac. Don't think I've had something with exclusively sumac as the adjunct. Earthy, berry-like, almost hibiscus-like, I suppose. But no lambic notes that I can find.
In the mouth it takes some getting used to, but grows on me. It's round and on the sweeter side, though not quite sweet. Bolstered by the earthy, tart, peppery sumac, it arrives at a rich balance but is decidedly not sour (not even tart) and not lambic-like at all. But it's an interesting beer with a complex sumac, oak and malt interaction with lingering vanilla and hibiscus notes. Soft, supple, gently sweet texture.

Clear, dark. Small, tan head.
Nose is fruity, chocolatey and well-barreled, with no excess sugar, no alcohol and only a bit of chalky, mineral-rich brandy-like character.
The flavor has the main force of the brandy barrel, with lingering fruity blackberry character that almost mimics actual blackberry additions. Nothing aggressive here; all is well-homogenized, including the blackberry, which is just a tasteful element. Chewy, satisfying body without syrup or excess sugar.

Elegant bourbon, not too little, not too much with prune and espresso-laced chocolate fudge and caramel. No alcohol noted. Seemingly good depth of malts with no excess sugar.
Spicy bourbon dries out the already well-attenuated malts. Tons of fudge and caramel with little/no roast (but enough to give it a stout feel). Chewy texture still has plenty of depth even after five years, but this certainly isn't a monster syrup-fudge bomb like many contemporary Imperial Stouts. More in the vein of Hill Farmstead's more elegant beers. No alcohol noted, plentiful bourbon, with lingering vanilla, raisin, fudge and bourbon spice.

Good mix of juicy apple, some skin tannin and mild Brett/soft funk. Not heavy on it, and the main force of the beer is the apple.
Good texture, nice and substantial and satisfying with reasonable sweetness while still having good attenuation. Mild Brett again, with the preponderance of flavor being fleshy, juicy apple and balancing tannin. Incredibly satisfying, balanced and drinkable.

A hazed reddish copper barley wine with a very thin off white head. In aroma, sweet fruity caramel malt with dark fruits, apple jam, alcohol warmth, light bourbon barrel notes, light vanilla, very nice. In mouth, a nice sweet fruity caramel malt with dark fruits, light licorice, alcohol warmth, a bit thin but good. On tap at brewery.
