Description
This Victorian property was originally home to the Cannon Brewery, which closed during World War I. It was later home to a Greene King pub called The St Edmunds Head, which closed in the early 1990s. The St Edmundsbury Record Office shows Pat and Liz Spillane purchased the property from Greene King in 1994, renovated the buildings, and reopened as The Old Cannon Brewery in December 1999.

The seven barrel brewplant is situated in a room above the bar, by the bar and in the pub cellars.

Cask at EBF Nov 25. Aroma is malty with a berry edge. Clear caramel. Foamy white head sticks to the rim. Flavourwise it's malty with a sour berry edge. Light-medium bodied. Soft carbonation. Long dry slightly astringent finish. A bitter not a pale.

7/10/2025. Tap at the Old Cannon Brewery, Bury St Edmunds. Aroma is malty, cereals, sweet grains, citrus, stone fruits. Medium sweetness, light bitterness, touch of tart. Light bodied, quite lively. It’s okay.

7/10/2025. Cask at the Old Cannon Brewery, Bury St Edmunds. Good pour. Aroma is malty, caramel, smoked. Moderately sweet and bitter. Smoky, charred wood was initially quite strong but faded. Warmed to it.

7/10/2025. Cask at the Old Cannon Brewery, Bury St Edmunds. Nicely hopped citrusy pale. Medium sweetness, light to moderate bitterness. Nicely drinkable.

22/8/2024. Cask at the 32nd East Anglian Beer & Cider Festival. Pours black with a minimally bubbly beige head. Aroma is sweet liquorice, dark fruits, blackberry, roasted malt, chocolate, toffee. Medium sweetness, light to moderate bitterness. Medium body, smooth, very soft carbonation. Nicely done. And 7/10/2025 at Old Cannon. See photo.

Cask at the St Albans beer festival 2025. A clear dull gold coloured pour with a a loose white head. Aroma is grass, citrus. Mellow. Flavour is composed of semi sweet, lemon rind, cif floral, lemon. Straw, grass.. Palate is semi sweet, nutty, pale grains. Citrus.. Not bad. Little bland. Ok.

Gravity cask at the 28th St Albans Beer Festival, 26/09/25.
Copper pour topped with a thin white crown.
Nose is stewed fruits, grains, hedgerow, a touch old skool and twiggy.
Taste comprises brown bread, biscuit, fruit rinds.
Medium bodied, soft carbonation, drying close.
Passable cask affair.

Pint at The Rusty Gun pub in the garden alongside an awesome pork burger. It was lovely. And it's a pity the same couldn't be said for the beer. Cold and wet, but no flavour or mouthfeel.

Pint at The Rusty Gun pub, in the garden at the end of a blindingly hot day. The beer wasn't great, but I blame the beer. Odd flavour and regretted the pint. I am sure it would be much better.

Cask at the Rusty Gun. Great pour on what was clearly a well kept beer. Hops and malt very well balanced and a perfect pint to accompany my burger.
