Located on Main Street in the historic district of downtown Waterbury, Vermont, our Restaurant is where you come for BBQ, classic cocktails and fresh beer. Our Brewery entrance is just around the corner We offer a Latin inspired menu and rotating Daily Specials . It's also where we brew the beer.

The appearance was a mild pale bronzed almost amber color with a film of a white little head. Sly lace.
The aroma started with a creamy sweet earthy stale maltiness up front. Light bubblegum and then a light tea sweetness comes about (guessing that’s the Chai). Some floral hops at the end.
The flavor yields to the charge of the sweet creamy-like lactose involvement. Earthiness propels some spice rubbing against the bubblegum, interesting. Super weird aftertaste, I didn’t mind, but I’m thinking a ton of people are going to hate this aftertaste, I think. Malty to tea-like finish.
On the palate, this one sat about a light to medium on the body with a fair sessionability about it. Carbonation felt fine. ABV felt as appropriate.
Overall, leave it to Pro Pig to take an English styled mild ale and \"weird it out\" for the rest of us to say, what in the what were they thinking. A rare oddity, but somehow, I didn’t mind this.

The appearance was a semi-soft yellow-ish almost bronze color with a thin white foamy head. Slight messy lace.
The aroma had some sweet corn, some cereal and then some grassy sweet to semi-bitter hops.
The flavor leaned towards the sweet side with a mild aftertaste of dried biscuits and corn. Brisk sweet finish.
On the palate, this one sat about a light on the body with a slick crisp contour over my tongue. Some carbonation was felt. ABV felt appropriate.
Overall, not bad as a pale lager. I could come back to if someone put it in my hand.

Reviewed from notes. On tap at the brewpub. The appearance was a semi-burnt amber color with a finger’s worth of white foamy head that dissipated at a mild pace. Sliding semi-foamy lace. The aroma had some semi-sweet toffee/caramel malts, super light nuttiness, lightly hopped - somewhat grassy. The flavor brings all of the previously mentioned aromas together-somewhat sweet yet lightly touched by some bitterness of the grassy hops. Light smooth biscuit notes coming out. Smooth semi-sweet malty aftertaste flowing into the finish. On the palate, this one sat about a light to medium on the body with a fair sessionability about it. Good ABV - felt fine on my tongue, as appropriate as it can be. Overall, not a bad Vienna lager, probably could do again, preferably with some soft pretzels and a football game.

The appearance was a ruddy burnt orange to amber color with a thin finger’s worth of white foamy head that dissipated at a nice pace. Messy stringy lace.
The aroma had some juicy pulpy citrusy sweet rindy bitterness. Light strawberry and peach make up a nice arrangement underneath.
The flavor leans to the sweet side of a blend of those previously mentioned fruity aromas. Lingering malty fruity notes in the aftertaste and in on the background.
On the palate, this one sat about a light to medium on the body with a nice sessionability about it. Carbonation felt fine and fairly low.
Overall, really nicely done APA that I would definitely have again.

The appearance was a muddy burnt orange color with a nice finger’s worth of white foamy head that dissipated at a decent pace. Moderate sticky lace.
The aroma blended sweet citrus to oats to pine to amplify that sweetness over the bitterness of the hops.
The flavor followed suite to try and be just as sweet yet sharpened it’s axe of bitterness decently on the taste buds. Sly malty response in the aftertaste with a combined malty to hoppy finish.
On the palate, one sat about a light to medium on the body with a nice sessionability about it. Moderate carbonation felt right. Stickiness doesn’t seem overwhelming, just there.
Overall, really nice APA for the most part that I would have again.

On tap at Prohbition Pig.
I had this in a sample glass and it had a nice one finger’s worth of white foamy head and dissipated nicely to allow a semi-messy spider web lacing.
The aroma yields to the German sweet malty yeasty breadiness just right. Yes, it seems just right.
The flavor copies the aroma very nicely yielding to a super smooth bready aftertaste and finish.
On the palate, this one sat about a light to medium on the body with a nice sessionability about it. Mild carbonation yielding to malty/bready smoothness rolling over my tongue.
Overall, for the style and by an American brewer, yes, this one is above par, me, I say when in Waterbury, there’s no reason to drink Long Trail’s flagship ever again.

The appearance was a transparent yellow burnt golden to pale sort of color.
Finger’s worth of white frothy head that dissipated at a decent pace leaving some sly messy lace
The aroma takes on some grainy malts, some bready yeastiness. Lots of Saaz hops.
The flavor leans towards the sweet malt and grassy sweet Saaz hops. Light grassy aftertaste and finish.
On the palate, this one sat about a light on the body with a spectacular sessionability about it. Carbonation sat pretty low with a big sweet yet bitter sharpness of the hops laying on my tongue nicely.
Overall, it’s a good pilsener, but probably could be scaled back just a tad on the Saaz hops, maybe.

Tap. Prohibition Pig, Waterbury, VT. Pale, milky yellow. Film of clingy, white head. Nose is very wheaty, and cereal like. Pulped peach. Some lemon rind. Sweet and husky. Taste is quite sweet and wheaty, with some lemon tartness. Light body. Dries out somewhat. Decent.

Tap. Prohibition Pig, Waterbury, VT. Thick as a bag, dark straw colour. Thin, lasting, off white head. Nose has a clove like, medicinal character. Some ripe peach and strawberry. Grainy malt backdrop. Taste has a ripe fruit bitterness. Some herbal sweetness. Medium body. Foamy carbonation. More of the herby thing on the finish. Decent enough, without jumping out of the glass.

Tap. Prohibition Pig, Waterbury, VT. Crystal clear, pale gold. Frothy, white head. Grainy malts. Sweet pear. Hint of bready yeast. Taste is grainy sweet, turning yeasty, lemon rind bitter. Plenty of hops in this. Bright mouthfeel. Crisp fizz. Spritzy bitter finish. Nice hoppy pils.
