(355ml can from L'Axe du Malt, Quebec City) Pours dark cola brown with a small tan head and no lace. Notes of quite sweet dark caramel malt, moderately roasted grains, bitter earthy cacao nibs, dark roast brewed coffee with a little coffee ground bite too, a bit liqueur like given the sweetness but finishing off-dry and rather bitter with all the roast/adjunct coming together. Light to medium bodied for style, oily, low carbonation and a little alcohol. Definitely not a pastry stout despite the name and adjuncts, a bit thin in the body without the malt complexity or heft I was looking for. Solid but not amazing, a typical QC stout.

(355ml can from L'Axe du Malt, Quebec City) Pours black with no real head, just a few stray tan bubbles and a ring. Aroma of anise/salt licorice, burnt grains, dark fruit, kind of musty wood, bourbon is restrained but clearly present with oaky vanillin and caramel. Flavour is fairly sweet with milk chocolate, toasted nuts, light caramel, touch of raisiny fruitiness, almost peanut-type salty savoury note, some burnt wood, bourbon is soft and vanilla inflected without much heat, ashy char and roast grains into the finish, light licorice as well. Light to medium oily slick body, very soft carbonation. Solid Baltic porter, doesn't drink just like a stout unlike some attempts at it. Enoyable to sip.

L’olfactif révèle des arômes de framboises, une touche chocolatée et acidulée. L’acidulé semble plus venir du fruit que de la levure. Notes de poussière et de terre également perçues. Une mousse dense et crémeuse de couleur moka avec une impression de rosé persiste plusieurs minutes sur un liquide noir et opaque. En bouche, la framboise domine largement la palette. L’acidulé est assez généreux et s’amalgame bien à la framboise, au chocolat et à l’alcool. La finale est sèche et dégage une légère âpreté issue de subtiles notes de torréfaction. Le corps est moyennement léger et l’effervescence plutôt douce. Le Bourbon est cependant très peu représenté ce qui aurait aidé à la complexité de la palette. Une stout funky aux framboises qui aurait intérêt à être un peu plus impériale.
