Description
We want to make wine for Nordic cuisine.
Fruit wine - well worth noting!
Although we can grow Rondo, Solaris and other grapes in Denmark, it will be difficult for us to compete with Germany and France when the quality and economy must match.
This is not the case with fruit wine.
Because we grow some of the world's best fruit in Denmark. The fluctuating temperatures during the growing season and not least between day and night, because the fruit gives a high acid content.
And the acid is just the most interesting thing with a winemaker's glasses.
These are fruity wines with lots of acid and fine fruit in the nose and taste.
Ideal companions for Nordic cuisine.

Clear copper orange cider, no head. Aroma: very fruity, sweetish, sugary, some caramel, candy, lovely. MF: medium to full body. Taste: sugary, very sweet apple juice, apple syrup, caramel, very nice. Aftertaste: sugary, alcohol, nice, very sweet, grape sugar, caramel touch, nice acidity, very nice!

Clear peach coloured cider, small creamy off-white head, unstable, non adhesive. Aroma: sweetish, bit oxidized, apple juice, sugary, little oxidized. MF: medium to full body. Taste: nice acidic start, some green apples, sugary, sweetish, very nice. Aftertaste: slightly sourish, soft alcohol touch, acidic, bit lemony even, fruity, citrus, sour apples, nice!

Bottle, 2015 vintage, 8% abv (at siidrimaja ice cider tasting). Pours amber. Aroma is boozy, apples, hint of acetone. Flavor is sour, acidic, sugar, apples, caramel. Overall: ok. --- Beer merged from original tick of Malus Danica on 10 Nov 2018 at 22:18

Sampled from bottle shared by SinH4 @ hotelroom tasting after Borefts 2018 Day 1. Clear dark golden color. Aroma I don't get very much other than the obvious apple notes. Flavor is intense ripe, even overripe apple. Seems not very balanced or refined though, a bit rough.

Danke an sinh4. Säuerlich würziger Beginn, Apfel, vollmundig, der trockene Hintergrund passt. Spritzig, intensiv apfelig bleibend, langer Nachhall. Gut! 10/9/11/12//12

Bottle, courtesy of SinH4. Aroma is flowers, honey, over typical ice cider aromas. Herbal. Body is heavy and strong, still strong apples. Complex and rich. Amazing!

GYG 280718. Dark golden color with no head. Aroma is apple, alcohol. Flavor is apple, alcohol, ripe yellow apple, dried fruits. Nice one.

2013 vintage pours a dark gold nearing amber, light legs, no head. Nose is wild, apple, tomato, quince, a little wet nuts, booze. Flavor has apple, roasted carrot, mild cherry, wet nuts, mild cherry. Finishes sticky and sweet.

Thnx to SINH4. Any dude that randomly keeps giving me ice cider, is a hero in my books. Current hero count : 1. Awesome guy right there! Pours rather amber colored, darker than the 'common' ice cider. Smell is full, intense, applesauce, booze is extremely hidden here. Really soft and mellow. Taste is extremely full. Applesauce, with noticeable, but not overpowering alcohol. Sweet, but perhaps a bit less sweet than most ice ciders I had before. This one in particular showcases some very intense natural apple flavor. Very nice, as like most to all ice ciders.

Bottle. Malus Danica 2012, 11% ABV. A faintly hazy dark golden colored beer, oily pour and still. Heavy aroma with apple pie, ripe yellow apples, some dried fruits and oxidation. Alcohol too. It's full-bodied, warming and oily, flat, Apple, apple pie, orchard and some dried fruits in the flavor. Lasting ripe apple and dried fruits finish with a pleasant warmth. Needs some appropriate dessert this one. 180728
