Bierbrouwerij De Pauw is not a modern beer factory full of measuring and control technology, but an old-fashioned brewery. The only tools are a watch, thermometer and scales. All Pauw beers are top-fermented, unfiltered, unpasteurised and with secondary fermentation in the bottle. We brew various types of special beer in an artisanal way, mostly according to Belgian recipes.

Bottle. Malty, spicy aroma: anis, cinnamon and coreander. Cinnamon, mint, anis and corander in the malty sweet flavor. The spicyness doesn’t bother me initially, but later on it really does. Licorice in the surprisingly short aftertaste. Not unpleasant for lovers of spiced beers.

Bottle from the new brewery in Den Ham: Blonde, cloudy, almost no head. Lemon and coreander in the aroma. Perfumed flavor with lemon and coreander. Fairly low on carbon. Hint of traubenzucker. Hop flash in the aftertaste. Thin. Much, much better as the totally infected brew of the former brewery in Ommen.

From the old brewery in Ommen: Vegetable aroma, almost detergent-like. Rather disgusting yeasty flavor with apple and detergent. Some hidden pineapple. Thin. Tastes and smells like a badly made home brew.

Bottle bought at the brewery. Brown color, cloudy, large chunks of yeast. caramel, honey and orange in the aroma. Malty sweet flavor, somewhat sugary with honey, hints of cinnamon and orange. Some milk chocolate and alcohol. Medium bodied. More a dubbel as a bock, but certainly not unpleasant and with enough character to challenge the sweetness.

Bottled 30 nov 2007 and drunk the same day. Not surprisingly it is blonde, very cloudy and has no head. Wanted to try it, however. Honey in the aroma. Sweet honeyish flavor with a hint of citrusfruit. No carbon. Has potential, but has to mature, of course. Will re-rate in a month or so. 06-01-08: same brew. Has developed a significant head. Honey, citrus and a hint of soap in the aroma. Milky, honeyish flavor, slightly flowery with citrus and some hopbitterness in the aftertaste. Fairly well balanced.

Bottle. Dark amber color. Cheap sweets and yeast in the aroma. Banana and cherry sweets. Malty sweetish flavor with banana, peach and raspberry. Quite drinkable, but surprisingly bland. Very short aftertaste. Chewing gum. Strange beer.

Bottle. Pinkish color, cloudy. raspberries and white berries in the aroma. Grainy sweetish flavor with raspberries. Fairly dry, oily residual sugars from the fruit. Carbonation is soft. Not bad.

Bottle. Pinkish red color, slight gusher. Blue berries and yeast in the aroma. Sweetish, slightly yeasty flavor with traces of berries. Short aftertaste. Not flawless but drinkable.

Bottle @ Morshuis Albergen. Soft asparagus aroma. Thinnish. Soft malty citric flavor. In the background a soft asparagus-like bitterness, Some yeasty notes. Drinkable.
