Traditionally brewed beer as it has been made for hundreds of years.
Bierbrouwerij De Pauw is not a modern beer factory full of measuring and control technology, but an old-fashioned brewery. The only tools are a watch, thermometer and scales. All Pauw beers are top-fermented, unfiltered, unpasteurised and with secondary fermentation in the bottle. We brew various types of special beer in an artisanal way, mostly according to Belgian recipes.

Bottle, picked up at a farmer’s market in Oldenzaal. Golden color. Malty, with soft citrus and floral notes in the aroma. Malty sweetish flavor with orange and soft vegetable notes. Fairy low on carbon.

Bottle shared at THT. Slight hazy dark amber with small white head. Rosemary, massive herbs, licorice, sage, more herbs, caramel, soft brown sugar. Over medium sweet and bitter. Full bodied.

THT November. Hazy amber with off white head. Sweet malts, caramel, rosemary, laurel, sage. Moderate sweet and bitter. Medium body and soft carbonation.

Bottle at tasting. Aroma of nasty veggies, malt and herbs. Taste of nettle, nasty veggies, malt, herbs and dry waste. This is really bad.

Bottle shared with my brother. Almost clear dark amber with beige head. Sweet berries, caramel, sugared cranberries, malts, light sweet herbal, soft medicinal finish. Medium sweet and bitter. Medium bodied. The finish is not good but otherwise it's not terrible.

(Draught at De Drie Dorstige Herten, Utrecht, 24 Feb 2017) Reddish brown colour with dense, beige head. Malty, slightly fruity nose with notes of caramel, red fruit and treacle-toffee. Malty taste with caramel, bread, red fruit and a gentle spicy bitterness in the finish. Medium body, with a touch of sweetness. Tasty and well balanced. Quite nice.

Thank you for sharing people! Sampled bottled as “Pauw Wintertrots” @ “Gouda Winterbier Festival 2016”. Dark red amber with no head. Nose is weird, some chlorine, licorice, cloves. Taste is licorice, touch watery, herbal, cloves, sugar,… Watery body. Quite a bit of a notes that I didn’t care for.
