Description
We’re a small team led by founders Samantha Lee, Stephen Bossu and Jonathan Fritz. The team is comprised of folks from all sorts of backgrounds, including nonprofit advocacy work, large production brewing and organic food sales — all of which inform our approach to running a brewery that not only makes high-quality, accessible beer, but is welcoming to all and provides a rewarding work environment for our employees.

Under the tab, there's a big impression of orange juice, then the usual piney nose from American type hops. The head kicks up pretty far in a tulip-shaped IPA glass. The taste sticks with the citrus hop notes, keeping the pine in reserve. There's a bit of a sweetness to the malt, in attempt to balance out the hoppiness, and which adds to the citrus impression. Pretty good standard IPA. 12 oz. can from Binny's.

Draught @ Beermiscuous, Chicago. Sweet, creamy and milky with some roastiness, coffee, cocoa, vanilla and chocolate notes, hints of cold brew. Sweet and lactic stout.

On tap at Red Arrow Taproom, Elmhurst. This shows a different abv and description than the "Farm and Family" saison. Almost a viscious pour into a stemmed glass. Slightly hazy brass color, a thin ring around the edge, showing a bit of legs when I tilt the beer. Pleasant "juicy fruit" kind of smell that I took a notch off just because it could be more subtle. But the taste is right there. Fruity and estery from a warm weather ferment. A note of yeast, maybe an edge of strawberry, the very slightest bit of funk. Taste is certainly more complex than the nose.

On tap at the brewery. Pours a clear rose with a white head that dissipates to the edges. Aroma is full of tart raspberry with a touch of juniper and yogurt underlying. Flavor has earthy tart raspberry and gin botanicals with a bit of yogurt.

Sampled from the tap at the brewery. Pours a clear gold with a white head that dissipates to the edges. Aroma has light funk and a bit of pine apple with straw and grass backing. Flavor has earthy pineapple and sweet funk with straw and grains backing.

Sampled from the tap brewery. Pours a clear yellow gold with a white head that dissipates to the edges. Aroma has a lots of grass with a light flora and straw backing. Flavor has lots of flora supported by citrus rind, grass and straw.

Sampled from the tap at the brewery. Pours a clear straw yellow with a white head that dissipates to the edges. Aroma is straw forward with hay and a touch of corn. Flavor is similar with straw and hay with a growing sweetness.
