On tap at Avant-Garde, pours a deep dark mahogany with a small beige head. Aroma is dominated by the maple syrup upfront; the sweetness is reigned in by a fungal, earthy character, which must be from the mushrooms; and the cognac barrels round this out by imparting a sweet, liqueur-like complexity. Flavour is almost like drinking maple syrup that has been tempered in sweetness by mushrooms—though no mushroom character is really discernible other than an earthy, slightly fungal character. The cognac barrels are not too harsh, but add this liqueur-like element that elevates this. A very slow-sipper, but constructed well and is complex. Very good.
