Description
in 1842 Thomas Dixon Ridley built his brewery on the banks of the River Chelmer. It was here that the Ridleys’ great tradition of brewing was born. The brewery thrived and Ridley’s beer was enjoyed at inns from Southend to Saffron Walden. Over the next 163 years six generations of Ridleys honed their skills and perfected their palettes to bring the people of Essex the best local brews, until the brewery was sold in 2005. In 2012 Nelion Ridley takes up the mantle once more, and with his craft brewery ‘Bishop Nick’, is devoted to keeping Essex ales sacred.

500ml bottle. Clear amber colour with average to huge, foamy, fairly lasting, moderately lacing, off-white head. Sweet-ish, mellow malty, fruity aroma, notes of strawberry and plum. Taste is minimally sweet malty, dry hoppy overtones, fruity hints of strawberry and plum; light body, slightly watery.

Chelmsford Beer Festival. Cask. Almost a clear amber beer, few pale cream colour bubbles. Palate is light, semi dry. Modest bitterness. Clear bramble fruits and a touch of marmalade. Light dry finish with a medium bitter linger. Good bitter.

The Sun Inn summer beer festival, Kelvedon. Cask. Clear amber beer, bubbly pale cream colour head. Palate is light, semi dry and with just modest fine carbonation. Malts are not that sweet, touch of caramel. Lightly bitter floral hops. Modest apple. A little spice and ripe fruits. Bitterish semi dry finish. Okay.

[ As Bishop Nick 1555 ].Clear medium amber color with a small to average, open and frothy - fizzy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, hay, caramel, toffee. Flavor is moderate sweet with a average duration, pale malt, caramel, sweet malt, sugary. Body is medium, texture is oily to watery, carbonation is soft to flat. [20140812]

Bottle at home in London - sourced from Ales by Mail. Pours clear copper-gold with a creamy, off-white head. Well, it’s easy to tell that this beer has a moderate brett infection. The nose has some berries, damp leaves, bread, poo, wood. Light sweet flavor with a bit of funky tangerine, drying wood, damp earth, leafy hops, bready sugars. Light bodied with average carbonation. More citrusy notes on the finish, tangerine, light grassy and leafy bitterness, some grainy bread, mellow poopy diaper. With the infection, which hasn’t really fully taken hold yet, the beer is probably more interesting than it would be without the infection. Novel.

Bottle at home in London - sourced from Ales by Mail. Pours totally clear chestnut gold with a frothy tan/off-white lather. The aroma has dry, leafy hops, berries, grains. Light sweet flavor with strong toasty, grassy bitterness, some earth, pine, grain husk, tea bag, berry skins. Light bodied with fine carbonation. Drying, bitter and lightly astringent on the finish, with dry and toasty malts, grains, leaves, tobacco, faint plastic, leather, more berry skins and grain husk. The aftertaste is a bit unpleasant, too grass and astringent. Could do with some tweaking.
