Description
For us, good living means exploring – the opposite of “comfortable.” It’s not just about craft, but about questing, questioning, transforming “What If” into “Here’s How,” by way of an experiment so crazy, it just might work.
Exploration is the line from local beer maker to World-Class Brewer. It’s a pioneer impulse, and it sets the authentic, rural heartbeat of Southern Tier. It’s how we got here. And by the time others catch up, it’ll be why we’re already somewhere else.
From our wildly innovative founder, Phin DeMink, who’s still a daily inspiration, to the new generation of brewers, thinkers, and drinkers who share our pursuit of what’s next, we keep honing the creative edge of brewing discovery.
So this is an open invitation, to anyone who gives a damn about the difference between a well-crafted beer and a stunningly satisfying encounter with the new. Join us on the road less traveled.

Deep dark stout with a thick creamy moka head. Black coffee aroma with notes of olives, finishing with smokey peat notes. Not a good sign. However, in mouth, a sweet concoction with black coffee, sweet chocolate and warming alcohol, with loads of maple and vanilla notes. Rich and full mouthfeel. An excellent stout, mared with bad breath. 6.99 at Party Source, Syracuse, NY.

Golden amber IPA with a thin light moka head. Very fresh hops, indeed unearthly, like sticking a hadfull of hops in your nose, with light caramel malt and light alcohol. Doughy malt in mouth with loads of varieties of hops, resinous, citrusy and herbal. A sweet malt balances well the whole beer, with a smooth alcohol finish. Bottle 7.99 at Party Source, Syracuse NY.

Sampled at the Odds and Ends Tasting on 8/16/06: Hazy dark gold color with a medium thin and fluffy off-white head, with thin patches of lacing. Nice aroma of hops, malt and wheat. Light-bodied with a soft mouthfeel. Hops and wheat flavors dominate, with some citrus in the background. The finish is mostly bitter but still retains the wheaty character. Pretty enjoyable overall.

(Bottle 65 cl) Completely brown and opaque with a light brown head. Sweetish, burned aroma with some ashy touches. Extremely full-bodied, rich and sweet body. Tons of roasted malts with lightly burned accents. Fat and sweet finish with bitter, burned notes and an almost prune like character. Yummy - but in small doses only. 130806
