Description
Although we hail from Chicago, we met in Munich at the Doemens Institute while studying for our Master Brewer Certifications. While bonding over the great beers and food of Bavaria, we soon discovered a mutual respect for the traditional brewing methods of continental Europe. As two educated brewers cut from similar stock, we decided to join our talents and shared vision into a stronger form, like a dovetail joint.

Our goal is to produce beer of the highest quality similar to the level of craftsmanship found in fine woodworking. We are merging continental European styles and techniques with American creativity to produce the kind of beers found in small, family-run breweries in Europe.

16oz can pours out hazy golden topped with a white head. Nose is smoke some corn husk grain and grass. Taste is more of the nice smoke forward husk grain and grass.

Can from Beer On the Wall Arlington Heights. Pours a straw gold color with a touch of haze. Bready malt aromas with light pear, grain and berry aromas. More of the same on the palate with some nice mineral notes that linger. Drying finish but the bready sweetness is still there. Very refreshing.

Pint can from Total Wine Madison, 3/16/22. Hazy orange, thin head, poor retention. Aroma of wheat, clove, citrus. Taste is citrus, wheat, clove. Thin, lingering spice. A bit rough. Okay. 63rd Ill Brewery.

On tap at Bangers & Lace. Pours dark brown. Biscuit, coffee, earthy, raspberry, quite earthy. Medium body. Good.

6 oz pour it yourself at Tapville Social in Evanston, Illinois. The pour is a clear golden with a small white head. The aroma is dry chalky mineral along with some soft clove. The taste is soft sweet herbal honey malt, nice earth mineral and dry soft chalk finish. The palate is medium to light bodied with soft carbonation and the dry finish. Easy drinking.

Pint can, packaged 9/8/21. Clear golden pour, with a slightly puffy head. Very light toast in the malt nose. Not expecting to sniff too much hop here. Taste is light and toasty, though I am picking up a bit of candy in the back. There is a bit of a filling quality, maybe from the bubbles. Otherwise light and refreshing. Or it would be if I were drinking this on a hot sunny day instead of in the basement when it's 0° outside. Well, that was my choice to have it now.
