Description
Our brewing focus is on the modern beer styles we love to drink, share and seek out. Top of the list are hazy and juicy hop-forward IPAs--big on flavour and low on bitterness. We also love brewing and drinking big pastry stouts that feature dessert-like flavours such as coffee, chocolate, coconut and maple syrup. We round out our lineup with fun and exploratory sour beers where we experiment with different flavour combinations through large fruit additions and other complementary ingredients. Our goal is to turn each of our beers into a memorable experience.

Aroma: extremely dank! Oh, whoa! 😬😬😬
Taste: along the same lines, veeery dank and juicy, nice body, low to moderately sweet.
Overall: car exhausts bomb, but it's very nice.

Poured from 473mL can (pkg May 28, 2025). Opaque yellow gold with small white head. Tons of gas fumes, gooseberry and light tropical hops. Very nice.

Aroma: juicy, tropical fruits, somehow a bit of booze,
Taste: along the same lines, semi dry with some hop burn, moderately bitter.
Overall: ok, not really the best from them.

Poured from 473mL can (pkg July 9, 2025). Opaque pale yellow with small white head. Stonefruit and feint pine hops with a bit of chalk base. Not terrible, but fairly average.

473mL can (thanks Sergiy). Pours nearly black with no head. Dark chocolate and milk sugars on the nose. Flavour has dark chocolate, candied banana, and milk sugars. Reasonably thick body. The banana is a bit odd here and too sweet overall, but not bad.

Some rim over black beer. Vanilla, tonka bean, chocolate, cocoa, and a bit cheesy. Hazelnuts indeed. Sweet, nutty, chocolate. Maybe how pastry stout ought to taste. Faint ashy extra, and somehow, spirit is suggested. Full bodied, heat, chewy, voluptuous. Punch-in-the-face pastry. Wonder what Baudelaire would have to say about this.

No head, jet-black beer, still. Bourbon and white distillate. Some resin, pine, cypress, chocolate. Hot chocolated, almost without diary; Bourbon, some nice hops. Nuts, Tonka beans, dessert chocolate with liqueur. Sticky, viscous, syrupy, and almost furious alcoholburn. Almost overdoing it. Almost.

Tap at Billies. Almost clear golden. Crisp malts, grandma, spicy hops, sulphur, grapes. Under medium sweet, medium bitter. Crisp medium body.
