Description
Many moons ago, in the black of the night, Viking invaders were about to attack our hometown of Stirling, when a howling wolf alerted the defenders, who saved the town. We raise a glass to that wolf. The Black Wolf.

Started brewing in January 2004 using the name City of Stirling Brewery. It was initially a sister brewery to Bridge of Allen and Trossachs Craft Brewery. During late 2005 a new company was formed to allow further investment and the brewery name was changed to just Stirling Brewery at the same time. The name then changed to Traditional Scottish Ales Ltd in 2006. The name changed once more in 2014 to its current version.

Cask at Alexander Bain JDW, Wick. Pours clear golden with small white head. Fruity citrus aroma. Medium sweet, fruity flavor with light bitter finish. Bit watery. Average.

Bottle, 4.8%. Hazy yellow with small white head. Aroma is malt, wheat, little yeast, spices and elderflowers. Flavour is malt, wheat, yeast, , medium sweet, hop, spices, little elderflower, little thin and a little bitter.

Bottle, 6%. Black with small beige head. Aroma is roasted malt, coffee, caramel and liquorice. Flavour is roasted malts, sweet, caramel, weird coffee, thin, little liquorice, little bread, sugar and a little bitter.

Bottle, 4.5%- Very dark brown with small beige head. Aroma is roasted malt, caramel, liquorice and a little chocolate. Flavour is roatsed malts, chocolate, caramel, liquorice, medium sweet, hop and a little bitter.

Cloudy golden-orange color with small white head. Aroma is bitter caramel, butterscotch and toffee. Taste is slight caramel, some earthy old world hops and toffee. Quite sweet and a bit honey. Feels light. Low carbonation. Not too harmonious and a bit weak, although quite drinkable. Combined with food, a ridiculous booziness evolves.

Bouteille: Black as ink, quckly collapsing off-white head, chocolate, vanilla, burnt malt and toasted malt in the nose; moderate sweetish-sourish flavour, both sticky and light bodied; sourish butnt malt in the chocolatey and malty finish. Not really convincing…

Bottle shared at a tasting at Max’s place. Dark brown to black with a small tan head. Aroma of roast, chocolate, nuts, a bit of caramel. Sweetish flavor, roasty, with chocolate, some nuts, a coffee note, caramel. Medium-bodied. Decent.
