Description
Known more as a cutting-edge cider maker, Eric Bordelet was a top sommelier at Arpege in Paris, before returning home to Normandy in 1992 to take over the family business. He biodynamically grows more than 20 apple varieties and 15 pear varieties
Production Overview: Manual harvesting from September to December. Fruit is coarsely crushed and gently pressed with settling and racking of the juice. Fermentation using traditional and natural ‘methode ancestrale’ (using only the fruits natural sugars) in vats and bottled retaining natural balance of sugar and acidity with additions of sulphites (mineral and solution) between 50-80 mg depending on cuvee and vintage. These are naturally gently sparkling in order to retain the original quality of each fruit.
Orchards: Mostly estate fruit with Poire Granit coming from very old trees scattered throughout the region. 30 varieties of apples, 20 varieties of pears and 8 varieties of Cormes.

Bottle 75cl.Clear light yellow color with a average, fizzy, fair lacing, mostly lasting - diminishing, white head. Aroma is moderate to heavy pear, rubber. Flavor is moderate to heavy sweet and moderate acidic with a average to long duration. Body is light to medium, texture is watery, carbonation is soft. [20081121]

2005 Bottle. Pours a golden color with a small off-white head that goes quick. Aroma of band-aid and Normandy cider funk with a touch of sweetness. Taste is dry, really dry, with a bit of bitter apple and corkiness... Fizzy mouthfeel dry.

Corked and caged 750 mL bottle from Whole Foods Market Charlottesville, VA. The cork is printed with both 2006 and 896/07. Pours a clear bright golden color with tons of carbonation. Big frothy white head shows low head retention and decent lacing. Very spritzy aroma with some funky barnyard notes and of course, apples. Taste is sweet apples with a very light olive-like funkiness. Carbonation is very soft. Very nice cider.

Cloudy golden with tiny white head. Fresh natural pears in the nose along with woody notes. Somewhat dry flavour with natural pears, wood and plum notes. Dry finish.

Bottle 75 cl. Courtesy of pinball. Clear pale golden with a small, white head. Fresh and fruity nose but not particularly pear-like. Light body, lightly sweet pear accents - very fresh - and a hint of vanilla. Vague underlying tartness. Pleasant. 221108

Bottle, 3%. The aroma starts off sulphuric, then turns a bit fruity. Hazy pale yellow colour. Actually has a little white head. The flavour is fruity and funky, hint of plastic. But the citrus flavour is very good. Good fruity aftertaste, as usual I cannot tell cider from perry.

75 cl bottle, 2004 vintage. on bottle it said 3%, not 4 as stated here. ar: cellar, pear, slight vinagre. 6 fl : very nice balance between pear and vinagre. pear taste quite in the background, could almost be an apple cider. 7 palate 3 overall 15 (a few small flavors draws down the overall picture, but it is good nevertheles) 3 for appearance because it actually had a nice head for some time.

75 cL bottle, courtesy of pinball. Pours clear to cloudy yellow with a greenish glare. Solid perry and mild acetone aroma. Nice acetone and perry flavoured with a light sweetness. Distinct and unique aroma and flavoured. Light sodapop finish.

Bottled at Stockholm Beer Festival. Spritzy golden. Sweet and fruity with leather and soap. Light-medium bodied, gently sparkling wth a ssweet apple jam flavour offset by tarter appleskins.

Bottled at Byns Crêperie & Ciderie, Stockholm. Clear deep golden, small brief head. Pleasant yeasty leathery flavour with a fruity intense apple flavour. Mid sweet and lightly sparkling. Juicy with tannic apple skins bitterness. Very drinkable and quite complex.
