Description
Known more as a cutting-edge cider maker, Eric Bordelet was a top sommelier at Arpege in Paris, before returning home to Normandy in 1992 to take over the family business. He biodynamically grows more than 20 apple varieties and 15 pear varieties
Production Overview: Manual harvesting from September to December. Fruit is coarsely crushed and gently pressed with settling and racking of the juice. Fermentation using traditional and natural ‘methode ancestrale’ (using only the fruits natural sugars) in vats and bottled retaining natural balance of sugar and acidity with additions of sulphites (mineral and solution) between 50-80 mg depending on cuvee and vintage. These are naturally gently sparkling in order to retain the original quality of each fruit.
Orchards: Mostly estate fruit with Poire Granit coming from very old trees scattered throughout the region. 30 varieties of apples, 20 varieties of pears and 8 varieties of Cormes.

Bottle @ Thewolf, tasting. Vintage 2000. Pours clear golden with a off white head. Aroma is dry, fruity, woody with a lot of pear & apples. Mainly sweet fruits & oak but has a good dry & tart feel. Great!

Bottle @ thewolf-and-his-flock-of-sheep tasting session. Clear golden color, no head. Aroma of apple, pear, some wood. Bit dry and sweet taste, alsom sour apples. Bit sparkling on the tongue. Quite reasonable stuff for a cider or perry.

Buttery and quite phenolic aroma. Clear amber color. Apple flavor, decently sweet and tart. Musty and phenolic underneath. Bandaid finish. As low as this rating is, it is the best thing I’ve had so far from Eric Bordelet.

It has a foul rubber and garbage smell. Golden, full of floaties. Replete with chlorophenols. Tastes like bandaids and rancid meat. It’s somewhere between a bio waste facility and a hog slaughterhouse. This is truly deserving of five goose eggs.

Pungent rubber and vinegar smell. dark gold and sparkling. Rubber and bandaid taste dominates everything. This was terrible.

2006 bottle. Pours with a relatively long lasting, rocky, white head. Palee yellow color. Leaves some legs and a little lacing on the glass. Strong pear and sugar aroma with a tad bit of plastic. Taste is very tangy pear, but very nice to sip at. Watery mouthfeel and a bit too fizzy.

2006 Vintage. Large, fizzy white head that disappears quickly. A decent amount of pulp in the glass. Body is golden. Aroma is sour, with apple, caramel and some plastic. Sweet apple taste with a little bit of plastic still present. Watery mouthfeel with refreshingly light bubbles (not trying to be a champagne, which is nice).

Sent in a photo to be uploaded. Pours a gentile yellow color with a nice ring around the glass and some lacing. Aroma is of pear and is very clean and crisp compared to others. Taste is of sweet pairs with a dryness in the back, not cloying in the slightest. Nice mouthfeel, light bubbles and a refreshing dryness. A bit expensive at 13€ (also considering my bottle was marked at only 3% abv).

2003 vintage. Slightly tart pear aroma. Amber tinged golden color with fine bubble, but no head. Appropriately thin in body with very mild carbonation. Flavor is tart pear. Then some apple develops. But in the end it’s all about pear. And dryness.
