Known more as a cutting-edge cider maker, Eric Bordelet was a top sommelier at Arpege in Paris, before returning home to Normandy in 1992 to take over the family business. He biodynamically grows more than 20 apple varieties and 15 pear varieties
Production Overview: Manual harvesting from September to December. Fruit is coarsely crushed and gently pressed with settling and racking of the juice. Fermentation using traditional and natural ‘methode ancestrale’ (using only the fruits natural sugars) in vats and bottled retaining natural balance of sugar and acidity with additions of sulphites (mineral and solution) between 50-80 mg depending on cuvee and vintage. These are naturally gently sparkling in order to retain the original quality of each fruit.
Orchards: Mostly estate fruit with Poire Granit coming from very old trees scattered throughout the region. 30 varieties of apples, 20 varieties of pears and 8 varieties of Cormes.

Misted gold. No head. Pleasant funk, barnyard, overripe, soaked apples. Rather dry. Intense flavour. Tart ending. Not bad.

330mL bottle, pours a clear blonde with a small white head. Aroma has pungent pear core, light barnyard notes, and some sugar. Flavour is sweeter than I want in a perry, with plenty of pear core, sugars, and a hint of funk. Definitely not an elite French perry/cider but it’s okay for a sweeter one.

Léger orangé, blanc pétillant peu tenace.
Arôme sur un bouquet pomme caramélisée, acerbe, fleuri en rétro-nasal - pommes pressées.
Palais sur une belle présence de pomme assez sec voire très marqué - acerbe tenace, touche en retrait surfant sur un effet tatin avec ce côé pomme caramélisée mais le tout reste quand même pris par un fini acerbe et bien pétillant.

750ml wired cork bottle from Vinatis. Opened with a pop. Clear golden colour, white foam head and aroma of ripe apple, fleshy, caramel. Taste is sweet, juicy apple, vanilla, caramel, with some funk and drying tannins. Medium bodied, spiky carbonation, medium sweet earthy tannic finish. Nicely drinkable.

750ml wired cork bottle from Vinatis. 4.5%. Opened with a pop. Sparkling, orangey gold colour, foamy off-white head that dissipates away and aroma of apple, fruit, baked notes, caramel. Taste is sweet, appley, ripe, fruity, caramel, hint of funk, with earthy bittersweet tannins. Medium bodied, spritzy carbonation, medium drying tannic finish. Nicely drinkable.

(Bottle) Golden colour, slightly hazy, with brief white head. Fruity nose with notes of pears, spices, honey, hay and a touch of vanilla. Fruity taste with yellow pears, spices, honey, hay, a touc of green tea and a generous acidity in the finish. Light body, with a slight sweetness. Fresh, tatsy and well balanced perry. Very nice.
