Description
Known more as a cutting-edge cider maker, Eric Bordelet was a top sommelier at Arpege in Paris, before returning home to Normandy in 1992 to take over the family business. He biodynamically grows more than 20 apple varieties and 15 pear varieties
Production Overview: Manual harvesting from September to December. Fruit is coarsely crushed and gently pressed with settling and racking of the juice. Fermentation using traditional and natural ‘methode ancestrale’ (using only the fruits natural sugars) in vats and bottled retaining natural balance of sugar and acidity with additions of sulphites (mineral and solution) between 50-80 mg depending on cuvee and vintage. These are naturally gently sparkling in order to retain the original quality of each fruit.
Orchards: Mostly estate fruit with Poire Granit coming from very old trees scattered throughout the region. 30 varieties of apples, 20 varieties of pears and 8 varieties of Cormes.

Bottle, 750 ml at Miro's grande. Cloudy golden with minimal white head. Pears, some sweetness, some apples, pleasant tartness. Refreshing and balanced. Nice.

Bottled. Hazy golden colour with a small white head. Aroma is floral, some apples, mild tartish tones. Flavour is green apple skins, some tart wood and mild mineralic tones. Apple juice aftertaste, somewhat dry palate.

Is this a new offering? 4.5, 2022. 12oz bottle from Appalachian. Mojito glass @home. Clear, pale gold, purty soda head, lingering lather. Sweet, tart, minerally, cabonic, slight pear florals on the nose. Initial bittersweet-ness becomes very sharp, veg & oaky. On the drier side. Lingering sweetness contrasts the papery pear skin. Very refreshing & easy. Finish is minerally pear florals & a backwash of acid. Great $8 import.

Less distro on this than the other Sidre I guess. Strange that I wouldn't have had it before. 2021 vintage, 6.5%. Lo-ball glass @home. Slow moving volcano. Clear, bright, honey amber, delicate foam. Mineral-y, earthy, lettuce-y, macerated apples, a little twinge of sweet barnyard. Bittersweet with some mild sharps, very mineral-y, white grape, grassy, slight earthy-soggy funk, yeasty feels, popsicle stick finish. Is there an extra brut version? This is still kind of sweet. Bit of a headache. Lovely dense & fine bubbles. Good. Great for the price. Just didn't wow me like other Bordelet bottles.

(Bottle, 4.5%) Pale amber colour with foamy, white head. Fruity nose with red apples, honey, hay and spices. Fruity taste with notes of red apples, honey, spices and hay. A slight apple peel harshness giving a mild bitterness. Medium body, with a certain sweetness. Generous fruity acidity. Really tasty and well balanced cider. The modest alcohol level makes it very drinkable. Very nice.

0.33 l bottle from 'Etre Gourmet'. Clear, golden with a thin, foamy, quickly collapsing, white head. Sweetish, gently fruity, moderately woody aroma of ripe pear, red apple and hints of wood. Gently sweet, moderately dry, quite fruity taste of ripe pear, red apple, some quince and traces of wood, followed by a short, slightly dry, a little woody finish. Thin body, gently effervescent mouthfeel, lively carbonation. Pleasant, refreshing but not overly complex and a little too sweet for my liking. Decent Perry.
