Description
Known more as a cutting-edge cider maker, Eric Bordelet was a top sommelier at Arpege in Paris, before returning home to Normandy in 1992 to take over the family business. He biodynamically grows more than 20 apple varieties and 15 pear varieties

Production Overview: Manual harvesting from September to December. Fruit is coarsely crushed and gently pressed with settling and racking of the juice. Fermentation using traditional and natural ‘methode ancestrale’ (using only the fruits natural sugars) in vats and bottled retaining natural balance of sugar and acidity with additions of sulphites (mineral and solution) between 50-80 mg depending on cuvee and vintage. These are naturally gently sparkling in order to retain the original quality of each fruit.

Orchards: Mostly estate fruit with Poire Granit coming from very old trees scattered throughout the region. 30 varieties of apples, 20 varieties of pears and 8 varieties of Cormes.

Bottle at Maakun’s. Clear golden with white head. Sweet apples, crisp and clear, cool apples, also some pear, cold cellared apples. Very crisp balance of sweet bitter and sour. Bottle shared at home, forgot where I got this from... Clear golden with small white bubbles. Crisp apple, light floral, berries, raspberries, light earthy, mineral. Crisp and dry but also has quite some red fruits, damn, I even get strawberries! Soft pear, lemon peel and soft herbs. Light sweet, bit over light tart and bitter. Very crisp medium body with soft sparkly carbonation and over medium dry finish. Very nice.

Bottle shared by sjogro at his birthday. Almost totally clear golden with small white head. Sweet apple, dry mineral funk, soft caramelized apples, light apricot, soft tannins. Almost medium sweet, light bitter and very light tart. Medium bodied with sparkly carbonation and medium dry tannic finish. Nice tannins, not too sweet, nice juicy and very nice body. Great. ⁰

Bottle. Clear golden body with a small but decent white head. Aroma is refreshing apple, light acidity and a faint hint of sulfur and some wooden cellar notes. Taste is medium sweet, moderate acidic, quite clean apple, hint of wooden cellar and no sulfur in taste. Fine body and OK aftertaste. A very nice, easy drinkable, straight forward everyday kind of cider. Nothing complex or extraordinary, but this is the kind of cider I could easily have anytime.

Bottle from SB. Clear yellowish, foamy white head that dissipates quickly. Zesty aroma and taste with prominent pear, some apples. Rich and sweet. Lovely stuff!

2016 vintage bottle shared with Mrs Scopey. It pours crystal clear yellow - gold with a thick, fluffy white head. The aroma is fresh, bright, sweet - sour, zingy, tart pear, sweet apple pie with custard, custard creams abd white grape. The taste is crisp, bright, zingy, sweet - sour, some fruity pucker, sherbet, juicy bright pear, spritzy, apple pie with custard, appletiser with a crunchy pear finish. Medium body and spritzy, effervescent carbonation. Fun stuff and plenty of flavour for the abv. A bit sweet perhaps, but enjoyable nonetheless.
