Description
Known more as a cutting-edge cider maker, Eric Bordelet was a top sommelier at Arpege in Paris, before returning home to Normandy in 1992 to take over the family business. He biodynamically grows more than 20 apple varieties and 15 pear varieties

Production Overview: Manual harvesting from September to December. Fruit is coarsely crushed and gently pressed with settling and racking of the juice. Fermentation using traditional and natural ‘methode ancestrale’ (using only the fruits natural sugars) in vats and bottled retaining natural balance of sugar and acidity with additions of sulphites (mineral and solution) between 50-80 mg depending on cuvee and vintage. These are naturally gently sparkling in order to retain the original quality of each fruit.

Orchards: Mostly estate fruit with Poire Granit coming from very old trees scattered throughout the region. 30 varieties of apples, 20 varieties of pears and 8 varieties of Cormes.

Bottle from Etre. Clear, dark yellow with very brief head. Acetic apples, light vanilla, hints of barnyard. Light acidity. Short finish.

Bottle from Etre. 2016 5% version. It pours clear pale rose gold with a medium foamy white head. The aroma is sweet, oily, sumptuous, perfumed, juicy pear, ice cidre, tart tatin, bit of must and candy cane. The taste is crisp, clean, dry, tart, sweet - sour, bright, spritzy, juicy pear, oily, white grape, gooseberry, vinous and just a touch of sherbet with a dry finish. Medium body, fine carbonation and oily mouth feel. Juicy. Rich and sumptuous. Tasty stuff with loads of flavour for the abv.

12oz bottle from Flat-Iron Wines. Tulip pour. Super active, fluffy head. Bold, vibrant, clear, dark gold body. Still some leftover head. Smell is pith, yeast, soap, earth, sawdust & dry apple cores. Taste is much too sweet. Syrupy sweet. Prickly carbonation, dusty cotton candy sweetness, solid acid, minor funk. Ugly sweetness on an otherwise bitter & tannic body that mimics some other very solid French pours. Can't keep drinking this.

Bottle split at L6, thanks to Danny, 05/09/18. Pale golden blonde with a decent off white cap. Nose is sweet pear, ice cider notes, grassy, sugars. Taste comprises pear tart, stewed pears, vanilla icing, light orchard wood. Medium bodied, fine carbonation, semi drying close. Decent perry.

Can shared at a Columbus tasting 05/09/2018. Many thanks! A clear petrol coloured pour with a fien white head. Aroma is sweet, airy, woody, vanilla, meaty, Flavour is sour acidic pear, crisp, woody notes, semi sweet, . Palate is semi sweet, tangy, pear, prickly highish carbosantion. .

Bottle shared in London - big thanks to Danny. Pours clear, pale yellow, with a fine, creamy white head. Very ashy, nice and true apple and pear notes, a little ripe apple, soft acidity, low bitterness. Medium bodied with delicate carbonation. Sweet finish but also drying, not at all cloying, rounded ripening pear, soft lemony notes. Great stuff.

Flat, clear golden color. Aroma is sweet sour-ish fruity, concentrated fresh apple juice, dried apricots, apple peel, fruit stones, grapes, oak, hay, minerals, citrus, caramel. Taste is sweet sour-ish fruity, concentrated fresh apple juice, sorrel, apple peel, dried apricots, grapes, citrus, hay, oak, caramel, caramelized tropical fruits. Medium bitterness, sweet sour-ish fruity mouthfeel. Nice one. Based on the older ratings, it seems like this has aged really nice during the years.
