Description
Known more as a cutting-edge cider maker, Eric Bordelet was a top sommelier at Arpege in Paris, before returning home to Normandy in 1992 to take over the family business. He biodynamically grows more than 20 apple varieties and 15 pear varieties

Production Overview: Manual harvesting from September to December. Fruit is coarsely crushed and gently pressed with settling and racking of the juice. Fermentation using traditional and natural ‘methode ancestrale’ (using only the fruits natural sugars) in vats and bottled retaining natural balance of sugar and acidity with additions of sulphites (mineral and solution) between 50-80 mg depending on cuvee and vintage. These are naturally gently sparkling in order to retain the original quality of each fruit.

Orchards: Mostly estate fruit with Poire Granit coming from very old trees scattered throughout the region. 30 varieties of apples, 20 varieties of pears and 8 varieties of Cormes.

Bottle, courtesy of DerA. Pours clear shiny yellow. Aroma is strong pear, even the peel. Body is heavy, but not too strong, just intense pear. Low bit lively carbonation. Juicy and even a bit oily. Sweet palate. Good!

330 ml bottle, from Vinmonopolet, Nettbutikken. ABV is 6%. Golden colour, pours sparkling with a fairly large (for a cider) white head, which actually lasts quite a while. Pleasant aroma of cider apples, hints of oak and sulphites. Medium sweet flavour of cider apples and eating apples, a hint of sulphites. Nice to drink.

Bottle shared by a friend, thanks Tyler! 2015. Clear golden yellow with off-white head. Aromas of pears and apples. Tastes of pears, apples, light wine. Light body with a dry finish. Nice, sweet.

Bottle shared at home, 2016, 7.5% abv. Clear golden with fizzy white head that lasts just a second. Dusty apple peel, tannins notes, dry champagne, soft herbs, earthy notes, quite leafy, more dry grape/champagne notes. Almost no sweetness, light sour and medium bitter. Medium bodied with soft carbonation and quite dry finish. Pretty unique, it’s quite nice in a way but also doesn’t go down as well as most good ciders.

Bottle 750ml. corked, shared by SinH4 @ BAF 2017 [ Borefts After Festival: BAF! ] @ Brouwerij Kaapse, Veerlaan 19-D, Rotterdam, Netherlands 3072 AN. [ As Bordelet Poiré Authentique ].Clear light to medium yellow colour with virtually no head. Aroma is moderate to light heavy pear, wood, light vanilla. Flavor is moderate sweet and light acidic with a long duration, tart pear, sweet pear, wood, dry. Body is medium, texture is watery, carbonation is soft to lively, but look is soft to flat. Bottle from SB. Clear, dark yellow with no head. Concentrated red apple, apple skin, vanilla, honey and a light tartness. Super balanced.

Bottle shared by Maakun. Hazy golden with sparkly bubbles and an actual head with some retention. Sweet apples, dry apples, nutty almondy woody dry tannin notes. Moderate sweet and bitter. Bottle shared at home. Clear darker golden with an actual head and lots of bubbles rising. Looks super good. Fresh apple, soft pear, apricot, light mineral funk, some cellar, light caramel. Medium sweet and soft tannic bitter. Almost full bodied with sparkly but not overpowering carbonation. Delicious.

Bottle. Pours clear straw, medium white fizzy head that dissipates quickly and leaves little trace. Aroma is pears, apple, lemon zest. Flavor is medium sweet pears and apples. Medium body, spritzy mouthfeel. Decent.
