Description
Known more as a cutting-edge cider maker, Eric Bordelet was a top sommelier at Arpege in Paris, before returning home to Normandy in 1992 to take over the family business. He biodynamically grows more than 20 apple varieties and 15 pear varieties

Production Overview: Manual harvesting from September to December. Fruit is coarsely crushed and gently pressed with settling and racking of the juice. Fermentation using traditional and natural ‘methode ancestrale’ (using only the fruits natural sugars) in vats and bottled retaining natural balance of sugar and acidity with additions of sulphites (mineral and solution) between 50-80 mg depending on cuvee and vintage. These are naturally gently sparkling in order to retain the original quality of each fruit.

Orchards: Mostly estate fruit with Poire Granit coming from very old trees scattered throughout the region. 30 varieties of apples, 20 varieties of pears and 8 varieties of Cormes.

Bottle shared at Gremlin 2nd anniversary. Thanks Davido! Lovely mead-like floral, honey forward nose with sweet pear and some light tartness as it warms. Very honey-like in texture, nectar even, with a slightly sticky mouthfeel. I like the way it coats the glass. Light tartness with well-rounded sweetness. A nice ride and my first highly rated perry.

Pours nice golden. Unmistakeable cider nose, with some autumn apples and a bit of apple juice freshness. Nice balanced sweetness with some bitter - not really hop bitter but still bitter - body. Very nice cider, could drink much more of this than that one sip that I had.

Bottled at Stockholm Beer &WF, first weekend, 2016.Clear golden color. Fruity, pear, sweet scent. Sweet, pear, light butter taste. Sweet, pear aftertaste. Smooth rich mouthfeel. Very light tart finish.

Refrigerated 75 cl brown bottle corked and capped, 2014 bottle poured into a glass. Hazy deep golden with small white head. Aroma is light Apple & wood, medium/light body, medium carbonation, and some lacing. Taste is lighter apple, a little wood, and pretty dry. May of been sweeter and better for my tastes fresh.

Sampled from bottle at THT May. Clear light golden with no head. Sweet and dense apple, pear peels, almost sherrylike. Fresh ripe apples. Sweet, subtle sourness, cobwebby dusty bitterness. Bottle at THT May thanks to kermis. Clear very light straw with short lasting fizzy white head. Sour pear, smoked herbs, white grapes, sour gooseberries, there’s a light smoky sulphur note running through that does taste like flint. Pear skin, grainy pear. Over medium sour, very light sweet and dusty bitter. Light bodied with fizzy carbonation.

Small slightly fizzy shortlasting head. Aroma is slightly fresh fruity, sour apples, apple peel, apple cores, grass, minerals. Taste is slightly dry and fresh, apple peel, dry apples, minerals, apple cores, hay, paper, grass. Medium bitterness, slightly dry and watery mouthfeel. Fair enough.
