Known more as a cutting-edge cider maker, Eric Bordelet was a top sommelier at Arpege in Paris, before returning home to Normandy in 1992 to take over the family business. He biodynamically grows more than 20 apple varieties and 15 pear varieties

Production Overview: Manual harvesting from September to December. Fruit is coarsely crushed and gently pressed with settling and racking of the juice. Fermentation using traditional and natural ‘methode ancestrale’ (using only the fruits natural sugars) in vats and bottled retaining natural balance of sugar and acidity with additions of sulphites (mineral and solution) between 50-80 mg depending on cuvee and vintage. These are naturally gently sparkling in order to retain the original quality of each fruit.

Orchards: Mostly estate fruit with Poire Granit coming from very old trees scattered throughout the region. 30 varieties of apples, 20 varieties of pears and 8 varieties of Cormes.

A very sweet cider. The aroma has pear, yeast, and apple. The flavor is intensely sweet but more from fructose and natural sugar rather than any additives. Abundant apple as well, and it is a little sour. Well carbonated, and gold in color, but I would have liked to see some sediment, but that is only my personal preference. This is a very good dessert drink.

(Bottle 75 cl) Courtesy of Hildigöltur. Pours a hazy, amber golden - absolutely no head. Sweetish/sour apple aroma. Medium body with soft and fresh apple notes and a somewhat astringent, peely finish. But overall quite nice. 280907

From 75 cL bottle, thanks to Hildigöltur. Pours hazy orange with no head. Slight citric and acidic aroma. Smooth mouthfeel. Flavour is slight acidic and apple, somewhat mellow. Great balance and clean finish. Quite nice.

Cork says 2003. Pours bright gold into a tumbler. No head or carbonation. Spritzy and sweet with sharp, sticky pear. I’m afraid it’s a little too much like a pear wine cooler.

A hazy orange cider with a thin white head. The aroma is sweet apply with light notes of wood and apple core. The flavor is very apply and quite acidic and with a dry end. It is very refreshing with the acidity.

(Bottle 75 cl) Fully golden with a small, creamy head. Aroma of sour apples. Lovely applemusty and slightly sweet apple flavours. The tartness found in the nose seems to have evaporated when the fluid hits your palate. 271105

Bottle at the Montreal tasting, 3/6/05. Sparkling gold, dark, champagne-like color, with some honey tones in there. Smells of sweet, candied pears, lots of honey and a touch of vanilla and cream. Some spiciness throughout the body, and a little playfulness from the carbonation, but yet again, another cider that just seems way too sweet for me. Powdery, dry lactic notes in the middle of the beer and then more borderline-syrupy sweetness on the end. I keep thinking these French ciders, with fancy cidrerie names are going to be incredible but this one isnt any better than the decent perry I can get around here. Don’t judge a book by its cover, aint it the truth.

A yellow very bubbly cider, that starts out with a huge white head, but it vanishes quite fast. The flavor is very strong and somewhat weird, since it has loads of carbondioxide in it, but also old pears and some wood. The flavor is sweet, slightly alcoholic with notes of overripe pears and wood, leading up to a dry but smooth end. Not really my thing.
