Description
Known more as a cutting-edge cider maker, Eric Bordelet was a top sommelier at Arpege in Paris, before returning home to Normandy in 1992 to take over the family business. He biodynamically grows more than 20 apple varieties and 15 pear varieties

Production Overview: Manual harvesting from September to December. Fruit is coarsely crushed and gently pressed with settling and racking of the juice. Fermentation using traditional and natural ‘methode ancestrale’ (using only the fruits natural sugars) in vats and bottled retaining natural balance of sugar and acidity with additions of sulphites (mineral and solution) between 50-80 mg depending on cuvee and vintage. These are naturally gently sparkling in order to retain the original quality of each fruit.

Orchards: Mostly estate fruit with Poire Granit coming from very old trees scattered throughout the region. 30 varieties of apples, 20 varieties of pears and 8 varieties of Cormes.

Bottled. Golden colour, no head. Aroma is apples, tropical fruit juice and some aidic wooden notes as well. Flavour is sweet and sour apples along with some slight buttery and yeasty notes as well.

Bottled. Orangeish golden colour, no head. Aroma is apples and some slight buttery and earthy and barnyardy notes as well. Flavour is mainly apples, some slight acidicness, mild cheese as well as some nectary notes. Pleasant and refreshing.

Bottled (2007 vintage). Hazy deep goldeny orange colour with no head. Aroma is green apples, some wood as well as earthy and herbal. Flavour is quite muh the same with some slight acidicness and some slight strange sweetish notes lurking in the background.

Bottle from Star Grocery in Berkeley, CA. Pours dark gold with a few white bubbles. Nice aroma of wood and apple skin. Medium body with light, but spritely carbonation. Flavor is aged apple, skin and some tart woodiness. Very good.

Bottled (tasted in early 2009), bought from Alko, Vaasa. Slightly hazy yellowish golden colour with no head. Aroma is barnyard, some slight pear as well as mild fruityness and earthyness. Flavour is rather much the same in a rather sweetish, but tart way. Also some mild underlying cheesy notes. Rather pleasant even though it’s quite low in the ABV.

Hazy deep blond color; no head retention, but fine perlage. Nice fruity aroma, fresh apples. Lean body, semi-dry mouthfeel; average apple flavor, rapidly followed by a delicate woody astringency. Fruity, not sweet, elegant.

75 cL bottle, 3% - I take it is the same. Pours clear and golden yellow with a small white head. Aroma is mild sulphorish and citric fresh apple fruity. Light phenolic at first with a nice sweet citric apple flavour following. Rather crisp apple and mild sweetness lingering into a mild sulphorish finish.

Bottle. Pours a very pale yellow color with a small white head. Has a fruity fresh pear aroma. Fruity and slightly tart pear flavor. Has a fruity and slightly tart pear finish.

2004 Bottle courtesy of dkachur at the 8th Richmond Gathering on 06/06/2009. Very clear golden body with a medium frothy white head. Very sweet pear and sugary apple aroma. Slightly tart highly carbonated pear flavor, some sugary notes. Medium light body with high carbonation.
