Description
Known more as a cutting-edge cider maker, Eric Bordelet was a top sommelier at Arpege in Paris, before returning home to Normandy in 1992 to take over the family business. He biodynamically grows more than 20 apple varieties and 15 pear varieties

Production Overview: Manual harvesting from September to December. Fruit is coarsely crushed and gently pressed with settling and racking of the juice. Fermentation using traditional and natural ‘methode ancestrale’ (using only the fruits natural sugars) in vats and bottled retaining natural balance of sugar and acidity with additions of sulphites (mineral and solution) between 50-80 mg depending on cuvee and vintage. These are naturally gently sparkling in order to retain the original quality of each fruit.

Orchards: Mostly estate fruit with Poire Granit coming from very old trees scattered throughout the region. 30 varieties of apples, 20 varieties of pears and 8 varieties of Cormes.

Acidic, dry, sulfur scent. Acidic, dry, gypsum taste. Smoke, faint sausage aftertaste. Dry mouthfeel, harsh seed bitterness. Made some funny faces when trying the taste of this one...

Acidic, apply, dryish taste. Medium mouthfeel; dry aftertaste, almost harsh. No bitterness, though some mouthpuckering, perhaps from apple seeds.

2004 750 mL bottle from Market Street Wine Shop, Uptown Location. Pours a clear straw color with a large head. Huge pear notes in the aroma with some slightly astringent wine like notes. Taste is huge pear with some apple and light cheese notes. Light and spritzy. Very flavorful. Slightly tart. Very nice.

Bottle. Pours a slightly hazy golden color with a small white lace. Has a fruity slightly dry apple aroma. Dry fruity smooth apple flavor with some very soft tart hints. Has a sweetish fruity dry apple finish.

Interesting caramel corn aroma. Flavor has some yeast, apple, and sweet pear juice.

Golden with a light sparkle. Fresh pear aroma. Slight leather, pit. Soft, dry, tannic, toasted pear. Very yummy. Great flavour.

Golden-tan colour. Petillant. Fresh apple with a hint of mace or clove. Somewhat bland, sweetish. Not much nuance. Definitely a standard, mainstreamish French cider.

Hazy amber. Soft effervescence. Very sweet and slightly smokey. Toasty with a sweet finish. Very soft. Delicious - those smokey nuances make this a very original and enjoyable cider.

Gold, sparkly. Rich, pulpy pear aroma. Fairly dry, a little leathery and the finish is quite tannic. Fresh pear taste.
