Description
Known more as a cutting-edge cider maker, Eric Bordelet was a top sommelier at Arpege in Paris, before returning home to Normandy in 1992 to take over the family business. He biodynamically grows more than 20 apple varieties and 15 pear varieties

Production Overview: Manual harvesting from September to December. Fruit is coarsely crushed and gently pressed with settling and racking of the juice. Fermentation using traditional and natural ‘methode ancestrale’ (using only the fruits natural sugars) in vats and bottled retaining natural balance of sugar and acidity with additions of sulphites (mineral and solution) between 50-80 mg depending on cuvee and vintage. These are naturally gently sparkling in order to retain the original quality of each fruit.

Orchards: Mostly estate fruit with Poire Granit coming from very old trees scattered throughout the region. 30 varieties of apples, 20 varieties of pears and 8 varieties of Cormes.

Bottle 75 cl. Courtesy of yespr. Clear amber golden with a tiny rough off-white head. Fat apple aroma with a woody edge. Medium body, a little low in carbonation, notes of overripe apples, a little sulphur and an astringent, peely finish. 200409

Clear golden with a tiny white short lasting head. Rather dry aroma with apples and woody notes. Somewhat dry flavour with natural apples. Finished dry.

orange very small bubbly head. very nice apple aroma, complemented by a sour apple note. not much citrus or vineagre. flavor is apple, sort of bitter, the usual sour or acid notes are replaced by a bitter note.

Bottled. A dark amber cider with just a whiff of off beige head. The asroma is very sweet with strong notes of over ripe apples and hints of acidity. The flavor is sweet with a tart metalic note and some over ripe apples. The is body is very thin and the mouthfeel flat. I’d hoped for much more.

75 cL bottle. Pours clear and golden orange with a fully gone head. Overripe apple aroma, vague phenolic to sulphoric aroma. Light metallic flavoured. Dry and mouldy wooden flavoured. Light acidic into the finish.

2005 bottle thanks to thecheeseman, shared with angrypirate06 and ilovedarkbeer. Pours with a frothy white head that remains in a ring for the duration of the experience. Very nice hazed golden body underneath. Aroma is everything that a Normandy cider should be: Dry with notes of cheese, band-aids, caramel, bitter crab apples and tons of phenols. This cider is extremely drinkable. Taste is very complex and lingers in your mouth for a minute or two. Smokey notes with band-aid, sweetness, slight medicinal quality, and a caramel, fresh apple sweetness. Lively bubbles, lush mouthfeel.

75cl bottle shared with faroeviking. clear yellow, small white head. flavor is acidand apple, rather mild, strange flavor besides the cider flavor.

Bottle 75cl.Clear light yellow color with a average, fizzy, fair lacing, mostly lasting - diminishing, white head. Aroma is moderate to heavy pear, rubber. Flavor is moderate to heavy sweet and moderate acidic with a average to long duration. Body is light to medium, texture is watery, carbonation is soft. [20081121]

2005 Bottle. Pours a golden color with a small off-white head that goes quick. Aroma of band-aid and Normandy cider funk with a touch of sweetness. Taste is dry, really dry, with a bit of bitter apple and corkiness... Fizzy mouthfeel dry.

Corked and caged 750 mL bottle from Whole Foods Market Charlottesville, VA. The cork is printed with both 2006 and 896/07. Pours a clear bright golden color with tons of carbonation. Big frothy white head shows low head retention and decent lacing. Very spritzy aroma with some funky barnyard notes and of course, apples. Taste is sweet apples with a very light olive-like funkiness. Carbonation is very soft. Very nice cider.
