Description
Known more as a cutting-edge cider maker, Eric Bordelet was a top sommelier at Arpege in Paris, before returning home to Normandy in 1992 to take over the family business. He biodynamically grows more than 20 apple varieties and 15 pear varieties

Production Overview: Manual harvesting from September to December. Fruit is coarsely crushed and gently pressed with settling and racking of the juice. Fermentation using traditional and natural ‘methode ancestrale’ (using only the fruits natural sugars) in vats and bottled retaining natural balance of sugar and acidity with additions of sulphites (mineral and solution) between 50-80 mg depending on cuvee and vintage. These are naturally gently sparkling in order to retain the original quality of each fruit.

Orchards: Mostly estate fruit with Poire Granit coming from very old trees scattered throughout the region. 30 varieties of apples, 20 varieties of pears and 8 varieties of Cormes.

75 cL bottle. Pours cloudy yellow with a huge white head. Aroma is dry apple and sulphorish. Dry apple fruity. Sulphorish too. Mild acidic and dry sulphorish. Dry and crisp apple fruity into the finish.

Bottle 750ml.Clear medium amber orange color with virtually none head. Aroma is moderate to light heavy apple, wood, moderate overripped apple. Flavor is moderate sweet and light acidic with a long duration, dry dry, hønserøv - chicken butt dry. Body is medium to light, texture is watery to oily, carbonation is flat. [20100629]

Bottle, 5.5%. Very acidic aroma, hint of acetone. Hazy grey/amber colour. The flavour is sweet and citric, but not as citric as the aroma. Has some apple core in the finish, giving it a dry and slightly rough bitterness in the aftertaste. Rough, but not bad.

Small offwhite head doesn’t last. Deep yellow body with carbonation. Sharp green apple and wood aroma with sulphury notes. Sweet-astringent fresh apple taste with wooden sulphury notes. Mid-bodied. Mild, fresh mouthfeel. Empty dryish faintly alcoholic aftertaste. Quite nice, and fairly drinkable. (0.75l bottle shared by gr0ve.)

750 ml "champagne" bottle, as Eric Bordelet Sidre Brut Tendre, from Vinmonopolet. ABV is 5%. Golden colour, pours very fizzy with a big but short-lived head. The aroma has notes of oxidised cider apples and sulphur, hints of smoke. The flavour is medium sweet (or medium dry, if you like), notes of cider apples again (of course), hints of sulphur. Easy drinking.

Bottle 750ml.Clear medium yellow orange color with a average, frothy - fizzy, good lacing, fully diminishing, off-white to white head. Aroma is moderate to light heavy apple, vanilla. Flavor is moderate to heavy sweet and light to moderate acidic with a average to long duration, dry, tart. Body is medium, texture is oily, carbonation is flat to soft. [20100417]

Bottle @ Brugmansia/Fonefan Tasting, April 2010. Pours clear yellow with a small bubbly head and lacings. Aroma is inviting. It has red apples and some vanilla and oaky notes. Flavor is red and green apples. Very fresh and tasty. Extremely dry... Nice

Bottle, 4%. Citric aroma, sweet apple notes. Clear dark golden colour. The flavour has the usual sweet apple notes that is common in French cider. Sweet but pleasant.
