Description
Known more as a cutting-edge cider maker, Eric Bordelet was a top sommelier at Arpege in Paris, before returning home to Normandy in 1992 to take over the family business. He biodynamically grows more than 20 apple varieties and 15 pear varieties

Production Overview: Manual harvesting from September to December. Fruit is coarsely crushed and gently pressed with settling and racking of the juice. Fermentation using traditional and natural ‘methode ancestrale’ (using only the fruits natural sugars) in vats and bottled retaining natural balance of sugar and acidity with additions of sulphites (mineral and solution) between 50-80 mg depending on cuvee and vintage. These are naturally gently sparkling in order to retain the original quality of each fruit.

Orchards: Mostly estate fruit with Poire Granit coming from very old trees scattered throughout the region. 30 varieties of apples, 20 varieties of pears and 8 varieties of Cormes.

Bottle, thanks Davido. Big pear aroma, lightly spicy, bit of funk. Taste is oaky, bit of plastic, pear. Very nice in spite of what it might sound from some of what I've written. Apple fritters...

Bottle, thanks Stefan, Happy Birthday! Pale yellow, looks like a rich white wine. Vanilla pear and dry apple aroma. dry sparkly, pear, quince, dry plum, restrained vanilla, botanicals, a hint bubblegum, . Dry, sparkly, very drinkable. Great stuff.

2017 bottle. Rather clear golden color with white head. Aroma is pears, quince, vanilla, Bratapfel. Taste is pears, quince jam, cucumber, herbs light butter, rustic earthy, mineraly, very interesting character - I suppose this is how Speierling tastes like? Dry finish, sparkly carbonation, mineraly mouthfeel. Very good! Bonus points for specialty.

Bottle shared at home, bottle from Etre Gourmet. Near clear golden with little bubbles. Sour and bitter apples, clean, rusty and cellar wet and sour and dry. Over medium sour, quite bitter. Medium body and low carbonation. Pretty rough for a French cider. Sidre must be a nod to Sidra & Cidre. Bit unexpected and not really what I look for in a cider but it is nice in its own right. Pretty strong sour for a cider!

Champagne bottle. Golden, clear, off-white head. Nice dry pear aroma, a bit dry skin, vanilla an barn. Medium body, dry, sparkly. Juicy dry base, a hint gummy bears, otherwise clean fruit, clean finish, very good.

Bottle. Fine pearling with a light green shine. Nice pearskin, dry fruity, a hint core, dry sparkly, nice and elegant.

75cl bottle from Whole Foods Kensington, shared with Soph in Kensington Gardens on a hot, sunny May afternoon. Pours pale gold, spritzy carbonation. Fairly rich, sweet perry pear character compared to standard normal-priced poirés, tart fruit, drying finish. Comes across like a perry-flavoured crémant. Decent.

330ml bottle from Beautiful Beers. Amber gold colour, white foam head that quickly dissipates away, and aroma of caramel, cooked apple, apple pie. Taste is medium-sweet, ripe apple, caramel & honey hints, alittle funk, apple pie, some tartness, drying. Light bodied, spritzy carbonation, quite dry finish. Nicely drinkable.

Bottle, 2016. Red gold, fine pearling. Dry pear, appleskin marzipan sparkles, medium dry sparkly, fullbodied sweetness, sparkly chewy. Hazlenut, old pear, marzipan, impressive balance - dry to sweet, fruity to dry spice. No nonsense great drink.

2016 bottle. Clear deep golden color with white head. Aroma is red apples, vanilla, custard, good funk. Taste is vanilla, juicy red apples at first, then immediately the funk takes over, light hazelnut, going towards a dusty, bone-dry finish. Bone dry, foamy carbonation. Great bone dry Cidre if you are into that. Lots of character going on here, no compromises, bold and balanced at the same time.
