Description
Known more as a cutting-edge cider maker, Eric Bordelet was a top sommelier at Arpege in Paris, before returning home to Normandy in 1992 to take over the family business. He biodynamically grows more than 20 apple varieties and 15 pear varieties
Production Overview: Manual harvesting from September to December. Fruit is coarsely crushed and gently pressed with settling and racking of the juice. Fermentation using traditional and natural ‘methode ancestrale’ (using only the fruits natural sugars) in vats and bottled retaining natural balance of sugar and acidity with additions of sulphites (mineral and solution) between 50-80 mg depending on cuvee and vintage. These are naturally gently sparkling in order to retain the original quality of each fruit.
Orchards: Mostly estate fruit with Poire Granit coming from very old trees scattered throughout the region. 30 varieties of apples, 20 varieties of pears and 8 varieties of Cormes.

Bottle at Stefan's 30th birthday party in Lustenau, Austria. Pours clear gold with a clean white head. Apple pie aroma, nice sweetness, juicy and quite delicious, reminds me a little of some of the Kentish style ciders. Good, in fact very good.

(Bottle, vintage 2015, 5.5% abv) Hazy amber colour with brief, bubbly head. Fruity nose with notes of apple peel, orange peel and a touch of oak wood. Fruity, vinous taste with apples, citrus, hay, oak wood and a slight bitterness in a bone dry finish. Good acidity. Medium body, dry. Crisp, elegant and really tasty. Very nice.

Bottle from Systembolaget. Did I really pay this much for a cider?!? Anyway. This is clearly a masterclass in perry. They get the entire pear from its flesh to its soft pippy middle. It feels like particuarly ripe to overipe pears were used. The aroma is of course pear, as is the taste, but there is a champagney element to it all. Very lively fizz that quickly fizzes off like a chemical reaction.Very sweet ending. It isn't quite an orgasm but it is very good. I prefered the Pacroy Domfront though which felt a little more mature.

Bottle pour at Capitol Cider, pours a clear golden with a small white head. Aroma is quite dry and tannic, with gentle farmhouse funk, gentle tannins, and crisp apple skins. Flavour is odd—like many French ciders, it somehow manages to be both bone dry and moderately sweet. There's light funk, plenty of tannins, and earthy funk—almost armpit-like. Lots of baked apple pie in the finish. Pleasant but not one of the premier French ciders.

#New Region - Pays de la Loire# Bottle sourced from Etre Gourmet and drunk at home - clear amber with a tiny white head. Balance of tart medium dry apples, some apple sweetness, light wooden accents, medium body and acidity, crisp and refreshing. Very nice.
