In August of 2005, the first jack hammer went into the ground in the empty warehouse in Pleasantville, New York, that was to become the living dream of our founder Scott Vaccaro. We brewed our first batch of beer in December of 2005. In December of 2011 we moved to Elmsford, finished construction of our new brewery, brewed our first batch of beer, and slowly shut down our old location. In 2014 we decided that it was time, after 9 years of making sour and wild ales, to take it to the next level by opening our new sour ale production wing, lovingly dubbed the “Fermento Funk Facility”.

Can from Beer Republic. Hazy ochre, thin, frothy, off-white head. Aroma of orange juice, rambutan, grapefruit peel, dank mango, papaya, spruce, pine, fresh shallot. Taste has sweetish orange, tangerine & mango, bitter citrus rind & pine, bit zesty over doughy malts. Floral hoppy finish with dank onion, herbal spruce, bitter tropical fruits and warming spicy gin-like alcohol. Medium body, oily texture, average carbonation. Good all-round NEIPA, lots going on here.

Can pour (4/7/21) from Worldwide Wine & Spirits, Southington. It’s a cloudy yellow with no sparkle, finger-width off-white head with poor retention and no lacing. Aroma is strong fruit with sharp orange citrus astringency, mild herb. Taste is mix of subtle nondescript fruit and vegetal, with background citrus and malt base contributions. Mouthfeel is light-to-medium bodied with smooth texture, average-to-lively carbonation, no alcohol, finish as taste with mild dry lingering bitterness. Overall, between the citrus astringency and disconnect between the fruit and the mild herbal quality, it stops short of being truly harmonious.

16 oz. can from Total Wine - Melbourne. Pours a crystal clear straw yellow color with a white head and fair retention. No lacing. Lots of streaming bubbles. Light citrus aroma. Tastes exactly like Bud Light Orange. Fizzy pale malt and artificial citrus flavor. Watery body. Very crisp and carbonated. Thin body. Okay as a beach/pool beer. Disappointing.
