Description
It seems simple.
Water. Yeast. Grains. Hops. That’s all it takes to make beer. But what we do with those simple ingredients within these walls is what makes us special.
Foothills began brewing beer at our West 4th Street location in March 2005, with three 15-barrel fermenters. Jamie and his brewers managed to crank out 800 barrels of beer that year, and doubled that output the following year.
As demand and production continued to increase, the need became obvious for more space. The solution came in the form of a 48,000 square foot warehouse a few miles away, an old manila envelope factory that was retro-fitted with brewing equipment and became Foothills’ main production facility, located at 3800 Kimwell Drive.
Today both brewery locations continue to produce our top-quality beers. We offer weekend tours from our tasting room at our main brewing facility. Conversely, if you ask nicely at the downtown brewpub, you can probably get a peek at the operation.

On tap at Flying Saucer - Raleigh, pours a hazy golden with a small white head. Aroma brings out a pungent and rather bitter piney hop character upfront, with a crisp toasted biscuity malt base. Flavour is along the same lines, bringing out bold piney hops, light dankness, and crisp biscuity malt. Piney and punchy. Very good.

On tap at Flying Saucer - Raleigh, pours a clear clear with a small white head. Aroma brings out light, tart cranberries, with a touch of lacto. Flavour is along the same lines, with subtle tart cranberries and a bit of lacto. Easy and gentle. Not bad.

Yeasty bread dough, cherry and strawberry nose. Clear rose medium head. Bready cherries. Light body, easy carbonation. Slightly tangy but fairly dry.

On tap at T&M Meats. Clear light amber with small off-white head. Aroma is berries, medium body, low carbonation, and little lacing. Taste is light strawberries.

Bottle shared at Lucky Bamboo share. Pours a thick, dark brown to black with a finger of beige foam that dissipates. Big dark chocolate cacao nib aromas with fudge brownie, light vanilla oak, coffee and toasted coconut. Great, thick body with roasty cacao bitterness, coconut, bourbon and rich chocolate brownie notes. Lingering chocolate, coconut and vanilla and bourbon. 4 week old bottle A: Crystal clear pale brassy pour with1/2" of lasting frothy foam and bubbles of various sizes. S: Clean bready scent with apple or pear fruit notes. T: Very dry, bitter and crackery with only a hint of the apple or white grape that linger at the end. Not as grainy as expected. M: Very light bodied and crisply carbonated finishing fairly dry. O: Nice crisp refreshing quencher that should be wonderful with light summer foods. I like it more than I expected to and could drink several.

Fairly hazy copper and bright peach coloured body with a nice two centimetre tall just off-white head that fades fairly quickly and doesn't leave much on top. Aroma of very nice and floral grassy and herbal elements with a lot of the full hop bud noticeable along with some light alcohol and supportive malts and a touch of caster sugar and fruit-based sweetness near the end. Medium to Full-bodied; Deep robust and rich malt flavours that blend perfectly well with the well-hopped and pungent bitterness and floral, dank grassy flavours that come through with all the hops. Aftertaste is a touch floral with some good maltiness, a little dose of sweetness and fruity flavours come through, but the perfumey and herbal character shows through and is quite nice. Overall, a very well-balanced Imperial IPA with a ton of hop elements without a pungent bitterness, but a good span into complexity and more herbal and grassy qualities as well and away from alcohol and pungency. I sampled this twelve ounce bottle purchased from Good Bottle Company in Charlotte, North Carolina on 09-May-2018 for US$2,75 sampled exactly a month later at home in Washington on 09-June-2018.
