Description
The brewery was set up at the end of 2004 in a beautiful farmhouse called “L’Olmaia” in Val D’Orcia, near Siena, Tuscany, initially as a small firm producing up to 300 litres per batch.
In 2009 it was relocated a few kilometers to the east in the area of Sant’Albino, near Montepulciano, where the products could be sold directly to the public. Throughout the year we produce 6 types of beer, plus some special seasonal beers, all of which are strictly unpasteurized, unfiltered and re-fermented, both in the keg and in the bottle. The production plant was built, according to our production needs, by the company Tefo of Parma, and it now has a production capacity of 2,500 litres per batch thanks to 4 cylindroconical fermentation tanks with a capacity of 2,500 litres and 2 with a capacity of 1,500 litres.
Inside the Brewery you can find the Tap Room with 6 beers on tap, cold cuts, cheeses and bottled beers.

Draught at Open Baladin Roma. Pretty watermelon pink with a tall white head. Fruity nose, dry and somewhat restrained, grapefruit and herbs. Tart, tangy flavor, and dry. Sour but lightly so, floral and herbal. Crisp and refreshing, dry, light, and clean. Great.

On tap at Open Baladin. Hazy amber beer, little white head. Light crisp palate, semi crisp. A little creamy malt supports sherbetty tangerine - orange hops. Nicely joined up. Light and refreshing.

Bottled, 0.75l. Pours hazy amber with moderate creamy brownish foam, flat carbonation and presence of yeast residue. Fruity aroma, seasoned with spicy hops, while detergent and alcohol notes are also present. Refreshing fruity taste followed by pleasant bitter aftertaste. Full bodied, oily texture and almost flat carbonation in palate. Forza Italia...

A hazed and murkey ale with a thin white head. In aroma, a herbal and grassy malt with light Brett notes. In mouth, a smooth lemony malt with Brett notes, earthy and grassy, very nice but some astringency in finale. Bottle from GRM, shared with Probstk, GRM, Mike and Shaun, Nov. 20 2011.

Little cloudy yellow beer, creamy white head, stable, adhesive with nice lacing. Aroma: fruity, citrus, exotic fruits, piny. MF: soft carbon, medium body, creamy texture. Taste: very bitter, hoppy, bit piny, exotic fruits, pineapple, some passion fruits. Aftertaste: very bitter and dry, very fruity, bit cheesy.

333 from Domus Birrae. Pours hazy gold with a slight white head. Light stone fruit aroma with some grassiness. Med body. Flavor is grassy bitter with some pale malt and wheat? Seems rather lagerish.

draft@Chez Moeder Lambic: hazy orange with a big, fluffy, descending white head that leaves lovely thick lacing on the inside of the glass, taste is bitter with a pungent bitter aftertaste, initial bitterness is very herbal with definite floral elements, lots of those kinds of hops & lots of grass, hay, the yeast presence also slightly goes over into the body, touch of barnyard funk, bitter orange/lemon peel, the bitter aftertaste that kicks in at the finish and lingers on afterwards if bitter herbal, slight floral with some bitter lemon peel, bit of a one-note bitter Belgian but not necessarily a bad one

Draft @ Moeder Lambic Fontainas, Brussels. Couleur dorée présentant un léger trouble, col épais blanc. Arôme de levure avec houblon citronné et qcq houblons aromatiques, le tout reste assez faiblard, mais démontre des notes dans le style belge. En bouche, bière reste douce, note de levure, houblon belge/allemand avec une fine amertume de citron. Petite pointe de fruits ou herbacé avec vers la fin une levure et houblon donnant une légère note épicée. Reste sèche.

Draft at Open Baladin in Rome. Cloudy orange color, massive thick amber head. Aroma of strawberries, tulips, honey. Taste is slightly sour, summer fruits. Very nice.

Draft. An unclear golden beer with a white head. The aroma has strong notes of fruits - especially peaches, combined with notes of coriander and yeast. The flavor is sweet with strong notes of coriander and fruits, leading to a dry, spicy, and hoppy bitter finish.
