Description
The brewery was set up at the end of 2004 in a beautiful farmhouse called “L’Olmaia” in Val D’Orcia, near Siena, Tuscany, initially as a small firm producing up to 300 litres per batch.
In 2009 it was relocated a few kilometers to the east in the area of Sant’Albino, near Montepulciano, where the products could be sold directly to the public. Throughout the year we produce 6 types of beer, plus some special seasonal beers, all of which are strictly unpasteurized, unfiltered and re-fermented, both in the keg and in the bottle. The production plant was built, according to our production needs, by the company Tefo of Parma, and it now has a production capacity of 2,500 litres per batch thanks to 4 cylindroconical fermentation tanks with a capacity of 2,500 litres and 2 with a capacity of 1,500 litres.
Inside the Brewery you can find the Tap Room with 6 beers on tap, cold cuts, cheeses and bottled beers.

Bottle. A flat one, slightly unclear, copper colored body. Oxidation, dark berries, notes of fortified wine, cellar and sourness. Medium body, no carbonation. The flavor is quite sour, with lots of dark berries and some cellar. Some alcohol blends in. Lasting sourness in the finish. A nice one, probably a bit demanding to drink a lot of, but a small glass was really nice. 100813

Bottled in some restaurant in Pienza. Hazy orange golden color, medium head. Aroma of some hop, grain, munchener/wheat? Bit sweet, bit bitter, and slight dry taste.

Bottled@The Chriso rock the roof down pre-GBBF tasting. Deep amber colour, small head. Aroma is roasted malts, some mild toasted bread as well as liquorice and some chocolate. Flavour is being the same in a quite nice balance. A bit sweet, otherwise very nice.

Cloudy cloudy mahogany with a small beige head. Sour aroma with lacto, sour red berries and oak. Flavor had plenty of lacto, roasted malt, oak and sour red berries. Finished sour and dry.

Drunk to celebrate my rating number number 17,600. Bottled. A hazy dark amber beer with next to no head. The aroma has notes of vinegar, caramel, and fruit. The flavor is lightlu acidic with notes of spices, vinegar, wood, and caramel, leading to a tart, dry, and spicy finish.

Bottle 50 cl. Pours a clear and warm orangey brown with a small off-white head. Lovely dry, Bretty nose, some wood and red wine. Considering the alcohol the body is very, very light. Lovely wood, caramel and dry Brett. More dry than tart, but lovely indeed and very, very drinkable. 100810

Bottled. A brown beer with lots of sediment floating around under a brown head. The aroma has notes of chocolate and malt. The flavor is sweet with notes of malt, caramel, chocolate, and vegetables - I’d say flawed.

Bottle at Chris O’s ’Raise the Roof’ tasting. Dark brown pour with a beige head. Raisins and wet wood aromas. Sultanas and some chocolate in the flavour. Forgettable.

Draft. An unclear light yellow beer with a thin white head. The aroma has notes of lemonpeal, coriander, and pomerans. The flavor is sweet with notes of malt, wheat, pomerans, and coriander, leading to a dry wheaty finish.
