Description
The brewery was set up at the end of 2004 in a beautiful farmhouse called “L’Olmaia” in Val D’Orcia, near Siena, Tuscany, initially as a small firm producing up to 300 litres per batch.
In 2009 it was relocated a few kilometers to the east in the area of Sant’Albino, near Montepulciano, where the products could be sold directly to the public. Throughout the year we produce 6 types of beer, plus some special seasonal beers, all of which are strictly unpasteurized, unfiltered and re-fermented, both in the keg and in the bottle. The production plant was built, according to our production needs, by the company Tefo of Parma, and it now has a production capacity of 2,500 litres per batch thanks to 4 cylindroconical fermentation tanks with a capacity of 2,500 litres and 2 with a capacity of 1,500 litres.
Inside the Brewery you can find the Tap Room with 6 beers on tap, cold cuts, cheeses and bottled beers.

Bottled at the brewery on September 4, 2015.Hazy golden color, medium sized off-white head. Fresh, hoppy, floral, caramel scent. Malty, caramel, bitter taste. Bitter aftertaste. Medium mouthfeel with lowish CO2, high bitterness.

Appearance: Very dark brown, fizzy light tan head.
Aroma: Malt, roasted. Pleasant.
Taste: Dark malt, roasted. Slight tar. Some burnt bitterness. Nice.

3cl botlle from Coop outside Firenze. Pours slightly hazy pale golden with a white head. Fairly fruity aroma with yeasty notes, light citrus, pale malt and hints of spices. Moderate sweet with nice and mild fruity flavours, some acidity and a quite dry and moderate bitter finish. Decent stuff!

12oz pour at IL Santo Bevitore pours a murky orange with some thick, lacing white head. Nose has buttered biscuit, orange jam, some yeast, some soap. Flavor is a little better, orange pith, soap, yeast, a bit of lemon tea, tannic. Dry finish with some soapiness. Tried for a pub ale and missed.

Black body, with a massive, stable, frothy, rocky, lacing, beige head.
Aroma of dark chocolate, coffee, cocoa, slight ash, some dark fruits.
Taste follows this, with some more liquorice.
Quite light, slick mouthfeel, with an average carbonation.
Finishes roasty, dry, with coffee, liquorice, some cocoa.

Nice one. A typical, straight Stout, full roasty, but also quite easy to drink. Nothing outstanding, but quite pleasant.

750 ml bottle. Slightly unclear deep reddish body with a small and fast disappearing off-white head. Aroma is mainly malty with a faint hint of acidic berries. Flavor is sweet and sour, malt, fruit, acidic berries, cherry, yeast and low bitterness. It’s a bit unusually, at least as a beer for Christmas, it might even be some unintended flavors here, but this beer just suits me fine this time. (Cellered bottle)

Bottle from tderoeck. Many thanks! Hazy golden colour, creamy white foam. Medium carbonation. Fruity aroma of flowers, pineapple and citrus. Bitter hoppy and dry finish. Well balanced. Good.
