Description
Uncork this bottle to celebrate Scottish apple bounty. Sip your way through secluded walled gardens and forgotten orchards. The time honoured artisan method of keeving is rounded by fermentation in the bottle – Méthode Champenoise. This uniquely Scottish bubbly boasts honeycrisp flavour and yellow undertones. Serve chilled as an aperitif or for your special occasion. This is not cider, this is seidear.

Our cider takes at least a year from harvest to bottle. We take our time, because the results are remarkable.

Our apples come from walled gardens across the North East of Scotland. We have found that small apples from older orchards often release the most interesting flavours, when expertly handled by our seidear maker. Our apples are coming from our own orchard at Cluny Castle, from Haddo House walled garden, and from many small backyard orchards.

Christian is our chief seidear-maker [CSM] responsible for reviving traditional techniques and adapting them to the Scottish climate and its unique apples. Colin is our chief fruit officer [CFO] and knows all about orchards and apples.

750ml bottle pour at Edinburgh Cider Salon, Montrose restaurant 01Dec2024. Golden colour, short-lived bubbles on top and aroma of apple, fruit. Taste is sweet, appley, funk note, with drying acidity. Medium bodied, fine carbonation, funk & dry acidic at the finish. Nicely drinkable

750ml bottle picked up at the Ellon Castle Gardens apple day 2023. It pours lightly h,u golden with a fluffy and lasting white head. The aroma is bright, spritzy, zingy, tart, tangy, sherbet, touch of white wine, sour green chewits, tutti frutti, crunchy apple, some must and hay. The taste is crispy, snappy, firm dryness, quite clean, crunchy fresh apple, apple skin, sherbet, soor plooms, white grapes, kiwi fruit, vinous, gooseberry, pithy lemon, dull alcohol presence and some woody tannin with a drying finale. Medium body and lively, effervescent carbonation. This would definitely go down well with white wine drinkers.

Glad to finally find this one as I live right next to Pitmedden gardens. 750ml bottle from the Inverurie whisky shop. It pours ever so slightly hazy very pale greenish yellow with a a fizzy, effervescent white head. The aroma is bright, zingy, tangy, fizzy candy, apple skin, crunchy apple,appetiser, sherbet, splash of white wine, hint of apple cider vinegar, gooseberry and soor plooms. The taste is crispy, dry, snappy, bright, crunchy apple, tart, tangy, gooseberry, white grape, melon, sherbet, soor plooms, touch of apple skin, light tannin and a touch of dry leaves with a drying finish. Medium body and moderate, effervescent carbonation. Bright, zingy and sherbety finish. Quenching.

Bottle from Taste of Grampian. It pours clear pale gold with a small white head. The aroma is fresh, bitter - sweet, crunchy apple, apple skin, custard apple, apple crumble, fresh and leafy. The taste is firm, dry, lightly tart, puckering, vinous, apple skin, lemony zing, crunchy apple, gooseberry, juicy, hay, spritzy and hint of tannin with a dry, mellow finish. Medium body and fine prickly carbonation. Very Moreish.

750ml bottle from the cidery's stall at Barra Castle xmas fair. It pours clear golden - copper with a effervescent fizzy white head. The aroma is earthy, wood, apple & pear skin, leather, warming spice, apple crumble, poached pear, touch of light funk and damp hay. The taste is crispy, dry, snappy, tart, puckering, vinous, tart white wine, juicy, crunchy apples, dessert pear, gooseberry, nip of acidity, touch of lemon sherbet, fizzy cola bottles, dry oak, light tannin and dull funk with a drying finish. Medium body and moderate, fizzy, spritzy carbonation. Really nice stuff. Vinous and quenching.

750ml wired cork bottle from Good Spirits Co Glasgow. Sparkling, clear golden colour, thin white foam head and aroma of apple, pear, caramel. Taste is sweet, fruity, apple, fleshy, some core, caramel, and drying acidity. Medium bodied, spritzy carbonation, medium-sweet finish. Nicely drinkable.

75cl bottle. Appearance - golden with a light haze. Gentle carbonation. Nose - ripe apple, bruised apple and an edge of funk. Taste - ripe but tart apple, apple skin and light wood. Palate - light to medium bodied, tangy middle and dry finish. Overall - very nice.
